Wheat Germ is essentially the embryo of wheat kernel commonly known as a wheat berry. It's analogous to the yolk of a egg. Wheat germ is a concentrated source of vitamins, minerals, and protein. It has a nutty flavor and is very oily, which causes it to turn rancid very quickly. Wheat germ is sold toasted and in its natural form and is used to add nutrition to a variety of foods.

It is a fibrous component of whole wheat that is removed (who knows why) when they make bleached flour. You can find it next to the flour in the grocery store.
