This is from scratch, but it always turns out good.
Wash, pare and thinly slice 1 lb. of white potatoes. Rinse and save in cold water until you are ready for them.
(Baking potatoes will mush in a casserole)
Dice or slice a mild white onion. Saute it in butter/margarine
Heat oven to 350. Grease a 1 quart oven-proof casserole dish with a cover.
Melt 2 tbs of butter or margarine in small sauce pan over low heat. Whisk in 2 tbs of flour. Whisk until smooth. Season with salt & pepper (white pepper give the dish a whole new taste. Try it)
Slowly whisk in 1 1/2 cups of milk. Stir until smooth & bubbly.
Drain and pat dry potatoes. Layer about half into dish, cover with onions, layer rest of potatoes, pour on white sauce, dot with butter/margarine if you wish. You may sprinkle bread crumbs or canned, fried onions on also.
Cover the dish and bake 30 minutes. Uncover and continue cooking until potatoes are tender, about 35 minutes.
Do not stir! Depending on your appetite you get 2-4 servings
A short cut is to use cream of mushroom or cerley soup in place of the white sauce. Again, you change the flavor.
Bon Appitite

6 large potatoes, sliced 1/4 to 1/2 inch thik
2 tbsp butter
1 tbsp flour
1 1/2 cup milk
2 cups cheese (your choice)
salt and pepper to taste

slice potatoes and boil on stove top til just soft
drain and layer in 9x13 baking dish

in separate pan, melt butter then whisk in flour. Add milk slowly, whisking constantly over medium heat. Mixture should thicken within a few minutes. Add the cheese (reserve 1/2 cup) and stir til blended, then salt and pepper to taste. Pour cheese sauce over potatoes, sprinkle with remaining cheese and pop into the oven. Cook for 20 to 30 minutes (depending on your oven) or until top begins to brown.

If you want a little more flavor, add cooked bacon to the cheese sauce or put a slice of onion, bay leaf or fresh herbs in the milk as it cooks.

shounds to me that she is not adding a flour or cornstarch paste to the potatoes. the flour is the best. I use potatoes, onions, ham or spam in layers. then pour a mixture of about a 1/4 cup of flour and water paste over them Then pour a little milk over them, about a cup. You can add butter or cheese to the top to add a little more flavor. Good Luck.
