If she reaches for it, or asks, then be smooth. Tell her that you wouldn't ever forgive yourself if you didn't get to pay for her lunch today.
Do not make a point of letting her know that you're paying. It's weird and dorky.

When the waitress brings the check, just grab it up and pay without saying a word. If she offers to pay something - just tell her to leave a tip and you have the rest. Or if you have to pay at the counter, just tell her you will pay and insist that you are doing it because you enjoy her company. Don't talk about it until the situation arises though, if you don't want to feel weird.

You don't say anything just grab the bill and say I got it. Don't make a big deal about it too as if she owes you something now. Just make everything flow as if any devious plan of yours is just a natural occurence. The talent here is required when you want the girl to pay for you.
