Not just painting. I want some type of overlay material such as plastic or something newer that willcover all of the wood and not just appear as painted.

Mirrored or frosted Plexi-Glass, available at most home centers like Lowes and Home Depot. Buy the thinnest stuff you can find and simply glue it to the plywood with an industrial adhesive such as Liquid Nails. I'd recommend cutting the pieces about a half inch larger than the piece your putting it on, then when the glue dried use a router(preferable) or a saw to trim the edges to match. Trust me, it's a lot easier than trying to line up the edges, besides which if your cabinets or cut are slightly off square you'll end up with uneven edges. This should provide the look you're after for the least amount of money and the easiest to DIY. If you have concerns about scratches go frosted as you'll not be able to see them as easily. Get self-adhesive vinyl tile, easy to install and goes with anything due to the various patterns to choose from.

I used clear polyurethane wood finish. It comes out nice.
