the wine yeast is a product of many many generations of preferential selection by wine makers. It is genetically superior to any bread yeast. you could start the process naturally, because bread yeasts are in the air naturally (risky). The best yeast are taken like sourdough from an existing batch known to be of a superior product. If you bought some good yeast from a supplier, you could use some of it on your next batch, but it's a lot easier and cheaper to just use another package. the process of drying without killing the yeast would be difficult

Wine yeast is the same species as bread yeast, so you could probably use that. Most wineries use strains of yeast that they have been using for years, which do give better results for distinct wines from each vineyard. However, for home winemaking I think bread yeast should be sufficient. Keep in mind that "active dry yeast" is literally dried yeast and a lot of it is dead. "Rapid rise yeast" is preserved with ascorbic acid and should give you better results, and the best yeast is fresh yeast, which I think you would have to buy from a bakery.

Nowadays, there are a lot of home brew shops that you can visit to buy this stuff. There are literally dozens of strains of wine yeasts each cultured for best results in fermenting certain type of wine. It's not just one type of yeast for all wines.

Don't attempt making or culturing at home, you can easily breed other air born yeast that can be detrimental to your home made wine.

I don't think it's easy to just "make" a yeast. These are living organisms that need to be cultivated and preserved.

You're best bet is to just go to a local u-brew type place and buy some. They'll stock different kinds for different types of wine.

I would suggest 'touring" a winery and ask them. Get in a few free glasses of wine while your there!
