How To Cook Rice
Boiling rice is harder than it looks. Often the finished product is sticky or "gluey." Here's a sure-fire way to produce rice that's light and fluffy.
Here's How:
Rinse the rice in water to get rid of excess starch.
For every cup of rice, add 1 1/2 cups water.
Bring the rice to boil, uncovered, at medium heat.
When boiling, turn the heat down to medium low.
Place the lid on the pot, keeping it tilted to allow steam to escape.
When you can see holes or "craters" in the rice, put the lid on tight.
Turn the heat to low.
Simmer for another 15 minutes.
Fluff up rice and serve.
Tips:
For best results, use long grain rice.
For a bit of variety, try one of the scented rices, such as jasmine. The amount of the water required and the cooking time will be less than for other types of long grain rice.
Spray a bit of Pam type cooking spray into the water before adding the rice.

Always use day old rice for making fried rice. Cook your rice the night before and let it keep in the fridge until you need it the next day. It will be perfect for frying.

As if we really needed to know THAT MANY ways to cook rice?
Simply cook your rice in the microwave an hour before you need it.In the Microwaving it self steams and all you do is add salt to taste and cover with water, cook on full power till desired softness is required. If it dries out too quick, just add more water!
Secondly, just before you fry the rice, dry fry a beaten egg in a HOT frying pan/wok FIRST,that way,the egg will be evenly and properly cooked and there would be no risk of salmonella !
Once the egg is cooked and going brown at the edges, add your rice.
No clumpy rice, just fluffy fried rice!
IT REALLY IS THAT EASY !!

try and not let the pan get to hot and that is how the rice sticks to the pan and to each other. it may take longer but let the heat be a low medium heat and keep moving the rice along so that it doesnt stick together and add some butter to keep it from sticking as well

Make sure you have enough water to cook the rice. And it should come out soft, so then you can like break it up with a fork.

Always soak or rinse your rice in cold water.
Sautee briefly in pan with oil on warm and make sure to cover every grain before adding in water.
Always works for me.

Lots of good advice here - ideally, fried rice starts with (leftover) cold rice.

You have to use old rice! Put it in the fridge the day before and it will firm up and the grains will separate.
