"Spanish Rice" - 8 servings

4 slices bacon
1/2 cup chopped green pepper
1/2 cup chopped onion
2 cloves garlic; minced
1 (28 oz.) can tomatoes; coarsely chopped
1 cup water
1 cup raw regular rice
1 tbsp. chopped parsley
1 tsp. salt
1/8 tsp. pepper

1) In 10" skillet over medium heat, fry bacon until crisp. Remove to paper towels to drain; crumble and set aside.
2) Over medium-high heat, in bacon drippings, cook green pepper, onion and garlic until vegetables are tender-crisp.
3) Stir in remaining ingredients except bacon; heat to boiling. Reduce heat to low; cover and simmer 25 minutes or until rice is tender and all liquid is absorbed.
4) To serve: Sprinkle with reserved bacon. Yields 6 cups.

A little something to wash it down with (maybe not Spanish!)...
"Kid's Sangria" - Serves 8

1/2 gallon cranberry juice cocktail
1 cup orange juice
1 orange
1 lemon
1 lime

Pour the cranberry juice cocktail and orange juice into a large pitcher; stir well.
Slice the orange, lemon and lime into1/4"-thick rounds. Add the slices to the juice, reserving one round from each piece of fruit for the citrus ice cubes (see Tip below). Refrigerate, covered, for at least 2 hours.
(TIP: To add even more color to the sangria, make citrus ice cubes. Cut a slice of orange, lemon, and lime into quarters or eighths - depending on the size of the round. Place a few pieces of citrus in each section of an ice cube tray. Fill the tray with hot water and freeze, then add the ice cubes to the sangria.)

Have fun and good luck with your dish(es).

Most people don't appreciate authentic spanish foods. Stick to the Americanized versions like tacos and burritos etc...

In the superstore, fruits are usually selected much too soon. Some are rocks, many are wrong. Some of the fresh vegetables are generally right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
