The simple answer is trying staying alive without it.

The vast majority of our body mass is made up of water... not just the obvious liquids like our blood and tears but also every living cell in our bodies is, in effect, little more than a water-filled bag.

Water is the solvent in which our bodily chemicals are dissolved - these chemicals cannot react together unless they are dissolved in water - no reaction... no life! To summarise some of the important functions of water in our bodies:-
* transport of nutrients
* transport of waste products
* transport of oxygen
* medium for all metabolic reactions in our bodies
* interaction with the world around us (eg. particles must dissolve in water before they reach our smell and taste receptors... this is why our noses and tongues are moist)
* reproduction - sperm will only swim in (water-based) liquid; the foetus will only develop in a water-filled sac
* cooling - when we are hot we sweat to cool down; sweat contains water
* protection - tears contain salts and other chemicals which protect our eyes

Alcohol is a toxin as far as the body is concerned and drinking plenty of water helps dilute it and assists in it's rapid disposal. Unfortunately alcohol is also a diuretic (which means it makes you lose water from your body)... so alcohol acts to slow down it's own disposal from the body - and causes the dehydration which we experience as a hangover.

We lose a great deal of water from our bodies every day and it is recommended that in order to stay healthy we should drink about 2 litres of water per day.
