Ingredientes - Ingredients:


Una taza y media de harina - 1 1/2 cups of flour
Media taza da azúcar - 1/2 cup of sugar

Dos paquetitos de levadura - 2 packets of dry yeast
Media taza de leche - 1/2 cup of milk
Media taza de agua - 1/2 cup of water
Media taza de mantequilla - 1/2 cup of butter
Cuatro huevos - 4 eggs
Entre tres y cuatro y media tazas de harina - from 3 - 4 1/2 cups of flour
Preparation:


Mix all dry ingredients together except the 3 - 4 1/2 cups of flour.

In a small pan, heat the milk, the water, and the butter. Add the liquid mixture to the dry mixture.

Beat well.

Mix in the eggs and 1 1/2 cups of flour. Beat well.

Put in the rest of the flour, little by little.

Knead the mixture on a floured board for 9 - 10 minutes.

Put the dough in a greased bowl and allow it to rise until it has doubled in size (about an hour and a half at sea level).

Punch the dough down and reshape it with some "bone" shapes on top to decorate it.

Let it rise another hour.

Bake at 350 degrees F (175 degrees C) for about 40 minutes.

After baking, sprinkle it with confectioner's sugar and colored sugar

November 2

Dia de los Muertos, or the Day of the Dead, is celebrated on
November 2 and is the Mexican tradition that corresponds to All
Saints Day and All Souls Day. The purpose of the popular
Mexican holiday is to remember the dead, honor ancestors, and
do so without melancholy. The following is a recipe for Pan de
Muertos, or Bread of the Dead, which is decorated with pink
sugared skeletons, tears, and various sorts of bones (Cool, huh?)
Light candles and eat this sweet bread at brunch on the morning
of the 2nd with living family and/or friends. Or you may wish to
book a flight to the small island of Janitzio in Lake Patzcuaro and
join their festivities!
Pan de Muertos (Bread of the Dead)

1 cake yeast
3 cups flour
1/3 cup granulated sugar
1/2 teaspoon salt
6 eggs, separated
1 tablespoon orange extract
1 stick butter or margarine
2 tablespoons anise extract
1 tablespoon grated orange rind

Glaze
1/2 cup sugar
1/2 cup water
Granulated sugar with just a dollop of red food coloring

Makes 2 round loaves.

Dissolve the yeast in 1/4 cup warm water & mix
with 1/2 cup flour. Let stand in a warm place for
15 minutes or until it doubles in size.

Sift the remaining dry ingredients 4 times.

Place in a large bowl & make a deep depression in
the flour. Add the egg yolks & orange extract; cut
in the butter; add anise & orange rind.

Mix well & add enough egg whites to form a soft
dough. Pound the dough against a lightly floured
wooden surface until it bubbles & doesn't stick.

Put the dough in a lightly greased bowl, cover it
with cloth, & let it stand until it doubles in bulk, or
about 1-1 1/2 hours.

Knead & shape into 2 round loaves, but reserve
some dough for the skeletons, tears, skulls, &
various bones that you want to decorate the bread
with. Be creative! Knock yourself out with your
creativity & attach your creations to the loaves.

Let breads rise on a greased baking sheet until
double in bulk. When breads have risen, bake at
375 for about a half an hour or until done. Cool.

Glaze: Cook 1/2 cup sugar & 1/2 cup water
together to form a thick glaze. Brush glaze over
breads & dust with the red-colored granulated
sugar. Wait a few minutes & dust with more
sugar. Cut when cold.

4-1/2 cups flour, divided

3/4 cup sugar

2 env. active dry yeast

1 Tbsp. anise seed

1 Tbsp. grated orange peel

1 tsp. ground cinnamon

1 tsp. salt

1/2 cup milk

1/2 cup water

1/2 cup (1 stick) butter

5 eggs, divided

1 Tbsp. KOOL-AID Orange Flavor Sugar-Sweetened Soft Drink Mix

1 Tbsp. sugar

1-1/2 tsp. water

MIX 1-1/2 cups of the flour, the 3/4 cup sugar, yeast, anise seed, orange peel, cinnamon and salt in large bowl; set aside. Place milk, 1/2 cup water and the butter in small saucepan. Cook on low heat until mixture reaches 105°F to 115°F; stir. Make a well in center of flour mixture. Add milk mixture; stir until well blended. Lightly beat 4 of the eggs. Add to flour mixture; mix well. Gradually add remaining 3 cups flour, 1/2 cup at a time, mixing well after each addition until dough is smooth but not sticky.

PLACE dough on lightly floured surface; knead 20 min. Place in large greased bowl; cover with greased sheet of plastic wrap and towel. Let stand at room temperature 1-1/2 hours.

REMOVE 1/4 of the dough; shape into 3-inch pieces to resemble bones and tears. Set aside. Divide remaining dough in half; shape each piece into a ball. Place on floured surface; knead 5 min. Place on greased baking sheet. Decorate balls of dough with dough pieces as desired; cover with greased plastic wrap and towel. Let rise at room temperature 1-1/2 hours or until dough is doubled in volume.

PREHEAT oven to 350°F. Beat remaining egg. Brush over dough. Bake 40 min. or until golden brown. Mix soft drink mix, 1 Tbsp. sugar and 1-1/2 tsp. water; brush over warm bread. Cool completely.
