Roasted Pumpkin Seeds Recipe #13549
FabulousFoods: Don't throw out the seeds when making Jack-O-Lanterns or cooking fresh pumpkins, they make great snacks that are rich in fiber as well as vitamins B and E. Kids especially love them. Purists will want only salt as a seasoning, but if you're feeling adventurous, experiment and have fun with seasoning blends.

Roasted Pumpkin Seeds
Categories: Snacks
Yield: 1 batch
1 Pumpkin
2 tb Vegetable oil
Salt to taste
Scoop out the seeds and pulp from a pumpkin, and separate the pulp
from the seeds, discarding the pulp.
Rinse the seeds in a large colander under cold running water,
removing any remaining clinging strings. Seeds will feel slippery to
the touch under the water.
Dump seeds, a small amount at a time, into paper toweling and dry.
Spread onto a large baking sheet and allow to finish air-drying for
an hour or so. When seeds are dry, toss them with the vegetable oil
to coat well and sprinkle liberally with salt. Spread into a thin
layer on the baking sheet and place in a 350 F oven for 30 minutes,
or until golden brown, stirring every few minutes to prevent burning.
Remove from the oven and allow to cool before serving.

Spicy Pumpkin Seeds These crunchy, savory seeds will be devoured by the handful. You can find pumpkin seeds in the health food section of your grocery store - or use the ones that you scoop out of your Jack-O-Lantern, why waste them. INGREDIENTS: 2 cups raw pumpkin seeds 1/4 cup butter, melted 1/2 tsp. Tabasco sauce 1 tsp. cayenne pepper 1/2 tsp. cumin 1 Tbsp. chili powder PREPARATION: Place pumpkin seeds on ungreased cookie sheet. Mix together butter and Tabasco sauce and drizzle over the seeds. Combine spices and sprinkle over the coated seeds. Toss well to coat. Bake at 300 degrees 35-45 minutes until golden brown and crisp, stirring seeds once halfway through baking.
