Chicken is the least expensive meat and you can do anything with it. Get a whole chicken place it in a pot with 1/2 C chicken broth. Bring to a boil and reduce heat to a simmer until chicken is done but moist.
Take the chicken out of the pot and let it cool until you can seperate it.
Once you have seperated the meat from the bone there are several things you will be able to make.
Obvious, chicken salad from the white meat.
Dice some of it and use in a casserole with egg noodles and cream of chicken soup with some veggies and cheese melted on top.
Make a milk based gravy and add chicken & veggies and serve over toast or biscuts.
Just use your imagination and some soup. Or shredd some an put into flour tortillas and you have the beginning of soft tacos.
Make a green salad and add chicken.
Oh yeah old fashioned chicken veggie soup. You could add dumplings.

What I started doing is making a large meal and using it for several dinners. For example, I'll make a Turkey. We'll have that for dinner that night. I will then I'll divide up the leftovers. I'll put some in the fridge for another dinner/sandwiches. And I'll cut some up into chunks put in the freezer to make Turkey Ala King or soup at a later date. That really helps out when I don't feel like cooking. I just take it out of the freezer and within an hour we are sitting at the table eating.
I also use my crock pot. I'll put in a chicken or roast before leaving and when I get home that's done. Then I'll make some noodles or potatoes, add a can of veggies or salad and we're good to go.
Another favorite of mine that my family loves to do is breakfast foods for dinner. Eggs, fried potatoes and some toast. Or maybe you have some sliced ham in the fridge or freezer that you can add to it. It's super fast and it's a nice change.

For cheap, healthy, quick and nutrious, you can't beat good 'ol chicken...
It can be fried (In Virgin Olive Oil or Canola), Stir Fried (Peanut Oil) it can be baked, boiled and barbecqued. It can be served hot off the stove, fresh out of the boiling pot or oven. It can be used cold in a salads. Chicken mixes well with almost any other ingredient or side dish...
It can be flavored with almost any spice and prepared to be hot, sweet, sweet and sour, salty, bland and anything inbetween...
As for the healthy part; You may want to stick with chicken with the skin removed. Therein lie's the high cholestrol count.
You can buy prepared, skinless, boneless chicken in cans and foil pouches now... Some of it canned like Tuna Fish...
Makes great soups, Chicken Salad, Chicken Salad Sandwiches,
Stews, Stir Fry and Cassaroles...
Buy a jar of Spaghetti Sauce; Put in a can of diced boneless chicken. Serve over rice with a vegtable... Buy a jar of White Sauce; Put in a can of boneless chicken. Add a can of mixed vegtables. Serve over crisp toast or biscuits as a main dish.
A can of chicken, a couple of packages of chicken gravy. Pour over instant mashed potato's...
I'm sure you get the idea by now. All "cheap", all "quick", all good for you...And the baby... !

try getting bigger cuts of meat like pot roast put potato and carrots in the bottom of a crock pot then add the pot roast put sliced onions and 2 bay leaves on the top and pour in about a 1/2 can of beef broth put it on low when you get home your dinner will be done make a salad and serve, the next day you can cut the left over meat up and boil noodles and warm the beef in the gravy drain the noodles then put the beef over the noodles, its better the second day.the point is try gettin 2 meals ouy of 1 piece of meat and you can do this with diffrent kinds of food like stir frys and spigg.

To Die For Fettuccine Alfredo
INGREDIENTS
24 ounces dry fettuccini pasta
1 cup butter
3/4 pint heavy cream
salt and pepper to taste
1 dash garlic salt
3/4 cup grated Romano cheese
1/2 cup grated parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

Fruit salad-- Just chop up the fruit you like and mix it in a bowl. I haven't made a dinner some people call healthy in a while, but the library is filled with quick and easy recipe book's. :)

caldo verde is so good for you it will probably be illegal in the united states soon --
2 lbs potato chopped up
1 lb kale cut chiffonade (little strips)
1 lb sausage (portuguese chouirco or linguica is best, spanish chorizo is easier to find) sliced kind of thin
1 onion
4 cloves garlic
1 teaspoon thyme
2 bay leaves
2 packages saffron seasoning if you have it
boil everything but the sausage and kale in enough water to cover and when mushy soft put in a blender. put the blender mess back in the pot and when its boiling again put in the sausage and kale and cook for about 5 mins til the kale is tender.
add some salt and pepper and serve.

Chicken stir-fry, with cut-up boneless skinless breasts, and frozen stir fry veggies plus soy sauce & garlic.
Ground turkey tacos, sloppy "Toms", or meatloaf.
Chef's salad with deli meat & cheese and a bag of prepared salad.
Soup & grilled cheese sandwich.
Find some good crockpot recipes, and put them in before work, and dinner makes itself!

u can't eat fish and shouldn't eat spicy food so here some ideas
chicken kabobs with chicken diced pieces cherry tomatoes onion and mushroom
pour italian dressing over the kabobs let sit in it and then grill them over brown rice or goyas yellow rice
for breakfast use bisquick heart healthy mix use blue berries egg whites two and splenda and mix batter egg whites and splenda together with some skim or 1 or 2% milk then pour into pan and add some blue berries as much as u want and flip to seal in and continue use sugar free syrup like log cabin or aunt jemima for the topping
how about grilled cheese use reduced fat cheese slices like kraft 2% and whole wheat bread serve with reduced sodium tomato soup
how about whole wheat angel hair pasta with grilled dice chicken and steamed broccoli mixed in together and put olive oil and garlic all over it fresh and heated in a small pan and put all over the food
