I'm a bartender, and I notice this too. It's total crap! I tend to do the opposite, I 'd try to order something cheaper if someone else is buying.

Because they're stingy, because it makes their round cheaper.
It can also be because they're copying someone else in on the round? If someone else says Stella, maybe they're trying to keep up with the alcohol content?
Teach them a lesson. Ask for Glenmorangie on their round. That'll shut them up.
