Whenever I try, it just turns to mess. It tastes lovely, but I can't get it to stick together in neat little pancakes.
I've tried using more eggs, but it just doesn't help. Could I be using too much cabbage? Doing something wrong with the potato? Frying without enough fat? Frying at the wrong temperature? Help!

Mix the ingredients together. Take a handful and mould it into a ball. Now flatten it out on a floured board. Do this with all of the mixture and leave the cakes to stand for about 10 minutes before you fry them. Then invite me to lunch.

Bubble and Squeak
Serves 4
450g (1lb) Potatoes, cooked and mashed
225g (8oz) Cabbage or Brussel Sprouts, cooked and finely chopped
25g (1oz) Butter or Oil
1 Onion, finely chopped
Heat the butter or oil in a large frying pan.
Add the onion and cook until soft and transparent.
Add the potatoes and cabbage (or sprouts).
Mix well.
Fry over a medium heat, turning occasionally, for 15 minutes or until golden brown.
Serve with bacon and eggs for breakfast or as part of a supper dish.
Note: There is quite some debate as to whether cabbage or brussel sprouts should be used in this recipe, personally I prefer cabbage, but the choice is your.

Personally I like mine in a nice heap of mess = )
But maybe try mixing a little egg white in with it. Then dip the pancake in more egg (yolk included) then coat with flour and just be really gentle when you fry it up. Non-stick pan, tablespoon of oil should do it, not too hot as you've got to heat all the way through without the outside getting too brown.

For perfect bubble and squeak - make sure the ingredients were cooked the day before and kept in the fridge - separately. Cook them the next day using just butter - you don't need anything else and have a greater amount of potato to anything else - it goes nice and golden brown on the outside - mmmm.

Patience! you have to wait a while for it to solidify on one side before you can turn it over. It needs to be a deep golden brown and to peel away from the bottom of the pan in one piece before you can flip it. If it is and it's still not solid enough, try doing it at a lower temperature for longer.

have you aged the cabbage enough? bubble and squeak is traditionally made with left over vegetables (from the day before) if you use freshly boiled veg it doesnt hold together.

my kids do this all the time wot i do is save all the Sunday dinner and then get a large pan with a knob of butter and fry IT up they love it people think it looks Gross but it tastes great

there could be too much water in the cabbage, try straining the water out using a seive. check out www.yummyfood.net, it has my recipe for bubble and squeak published, and its great!
