Orange Chicken
2 pounds boneless chicken pieces, skinned
1 egg
1 1/2 teaspoon salt
White pepper
Oil
1/2 cup plus
1 tablespoon cornstarch
1/4 cup flour
1 tablespoon minced ginger root
1 teaspoon minced garlic
1 dash crushed hot red chilies
1/4 cup chopped green onions
1 tablespoon rice wine
1/4 cup water
1 teaspoon sesame oil
***Orange Chicken Sauce***
1 1/2 tablespoon soy sauce
1 1/2 tablespoon water
5 tablespoons sugar
5 tablespoons white vinegar
Directions:
Cut chicken pieces into 2-inch squares and place in large bowl. Stir in egg, salt, pepper and 1 tablespoon oil and mix well. Stir cornstarch and flour together. Add chicken pieces, stirring to coat. Heat oil for deep-frying in wok or deep-fryer to 375 degrees. Add chicken pieces, small batch at time, and fry 3 to 4 minutes or until golden and crisp. (Do not overcook or chicken will be tough.) Remove chicken from oil with slotted spoon and drain on paper towels. Set aside. Clean wok and heat 15 seconds over high heat. Add 1 tablespoon oil. Add ginger and garlic and stir-fry until fragrant. Add and stir-fry crushed chilies and green onions. Add rice wine and stir 3 seconds. Add Orange Sauce and bring to boil. Add cooked chicken, stirring until well mixed. Stir water into remaining 1 tablespoon cornstarch until smooth. Add to chicken and heat until sauce is thickened. Stir in 1 tablespoon oil and sesame oil. Serve at once. You may want to add grated zest of 1 orange to the sauce ! for flavor.

ORANGE CHICKEN WITH GOLDEN RAISINS AND FIGS
Dja'jeh Burd'aan b'Teen
Dja'jeh Burd'aan b'Teen is particularly liked by children because of the sweet, familiar flavor of orange juice. Serve over white rice. The dish tastes even better reheated the next day, once the chicken has marinated in the juice and spices.
Sauce
1 1/2 cups coarsely chopped yellow onions
2 cups peeled and cubed white potatoes (any kind)
1/4 cup golden raisins
1/2 cup whole Black Mission figs or the larger, amber-colored Calimyrna figs, cut into halves
1 1/2 cups fresh orange juice, strained
4 1/2 teaspoons Worcestershire sauce, (preferably Lea & Perrins, or another brand that lists tamarind as an ingredient
1/2 teaspoon curry powder
1/2 tablespoon soy sauce
Chicken
3 pounds chicken pieces (white and dark meat)
1 teaspoon salt
Several grindings of black pepper
1 teaspoon garlic powder
1/2 teaspoon ground allspice
1/2 teaspoon paprika
4 1/2 teaspoons olive oil
To Serve
1 recipe Basic Syrian Rice (recipe can be found in book)
1. Prepare the sauce. Combine all the ingredients in a medium-size bowl and set aside.
2. Prepare the chicken. Rinse the chicken under cold running water and pat dry with paper towels. Place on a plate.
3. Combine the salt, pepper, garlic powder, allspice, and paprika in a small bowl. Rub the spices into the chicken skin.
4. Heat the olive oil in a large pot over medium-high heat. When the oil is very hot, add the chicken pieces and brown, cooking for 2 to 3 minutes on each side. Pour the sauce over the chicken and simmer, covered, over medium heat until the chicken is cooked through and very moist, 30 to 45 minutes.
5. Serve the chicken pieces over rice, with the sauce spooned on top.
Makes 4 servings.

Chicken Wings with Orange Sauce
1-1/2 cups fresh squeezed orange juice, divided
2 TB soy sauce, divided
2 TB green onions, chopped
2 tsp. garlic, minced
1 lb. chicken wings
2 TB brown sugar
Salt and ground black pepper, to taste
Combine 1 cup fresh squeezed orange juice, 1 tablespoon soy sauce, green onions, and garlic in a large zip-top plastic bag.
Add chicken wings, coat evenly with liquid. Seal and marinate in the refrigerator for 4 hours.
Combine remaining 1/2 cup orange juice, 1 tablespoon soy sauce and the brown sugar in a small sauce pan to make glaze. Heat mixture to boiling, and cook until liquid is reduced to half of the original volume and is the consistency of syrup. Set aside.
When ready to cook chicken wings, preheat oven to 350º F.
Remove wings from marinade, drain, and place on baking pan. Season with salt and pepper. Discard marinade.
Brush wings with orange soy glaze. Bake wings for 25 - 30 minutes, brushing with glaze every 10 minutes until done.
Makes 6 servings.
Note: for easy cleanup, line baking with foil and coat with non-stick spray.
