JAM THUMBPRINT COOKIES
1 c. butter
1/2 c. sugar
2 c. flour
2/3 c. jelly or jam
Soften butter. Add flour and sugar; mix well. A small amount of water may be added to the dough to facilitate mixing. Roll into 1/2 inch balls. Flatten with a glass dipped in sugar. Indent center. Add 1/2 teaspoon jam or jelly. Bake at 350 degrees until slightly brown. Makes 3 dozen.
SUGAR COOKIES
2 1/2 cups flour
1/4 teaspoon salt
1 cup butter, softened
1 cup sugar
1 large egg
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
Decorative icing, optional
Combine flour and salt in bowl. Beat butter and sugar in mixer bowl until light and fluffy. Beat in egg, almond extract, and vanilla. Gradually beat in dry ingredients. Wrap and refrigerate overnight.
Preheat oven to 350°F. Grease 4 cookie sheets.
Divide dough into quarters. Between 2 sheets of wax paper, roll one quarter 1/8-inch thick, keeping remaining dough refrigerated. Cut with floured 4-inch round cutter.
Bake 8 to 9 minutes, until edges are golden. Cool on wire racks. Repeat with remaining dough.
Decorate as desired.
Makes 3 1/2 dozen.
Decorative Icing: Combine 2 cups confectioners' sugar, 1 large egg white and 1 tablespoon water in mixer bowl. Beat until smooth and thickened, 3 to 5 minutes. Tint icing with paste or liquid food color as desired.
Serving Size: 12.

Homemade Donut Holes
6 cups vegetable oil for frying
1 egg
1/4 cup white sugar
1 teaspoon vegetable oil
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup white sugar
2/3 cup milk
2 Tablespoons cinnamon
Directions
1 Heat oil to 365 degrees in a deep fryer or heavy saucepan.
2 In a medium bowl, beat the egg, 1/4 cup sugar and 1
teaspoon oil until light. combine the flour, baking powder and
salt, stir in alternately with the milk until well blended.
3 Drop by teaspoonfuls into the hot oil and fry on both
sides until golden. Drain on paper towels and roll in 1/2
cup white sugar/cinnamon while still warm.

You could make jam thumbprint cookies. You wouldn't need the yeast. Or you could make scones and have them hot with the jam and a cup of tea.
