I am looking for an excellent marinate for chicken. We are going camping next week with friends and they have young kids. Any ideas out there?

I have a great RUB recipe--less messy than marinade, especially if you're "roughing it".
Mix the following, and rub on & in chicken several hours before cooking:
2t salt,1t paprika,1/2 t onion powder,1/2 t thyme, 1 t pepper, 1/4 t cayenne pepper (more if you like spicy) and 1/2 t garlic powder.
I use this when grilling, or baking, or in the rotisserie--the flavor blend is wonderful!

Prepare either one of these according to package directions, then marinate your chicken.

1) Good Seasons Italian Salad Dressing Mix
2) Onion Soup Mix

night before you leave !
combine (per 2-4 lb. bird )
1-cup miracle whip
10-garlic cloves
1/4 cup lime juice
1/4 cup worshestershirecher sauce
salt and pepper
you can add some hot sauce it won't be that hot after its grilled
blend to a thin puree add vinager if needed
place chicken in freezer bag add marinade coat well and freeze next morning pack with the bottom up so the frozen marinade will thaw and drape the then top of the chick.while freezing !
this is really good grilled over cool coals /

MARINATED CHICKEN BREASTS

Marinate skinned, boned chicken breasts in marinade:

1 tsp. salt
1/8 tsp. pepper
1/2 tsp. rosemary or thyme
1 or 2 cloves garlic, press (optional)
1/4 c. olive oil


GRILLED MARINATED CHICKEN

2 sm. fryers, cut up
3 oz. oil
3 oz. wine vinegar
3 oz. cider vinegar
1 1/2 tbsp. Worcestershire
1 clove garlic, minced
1 tsp. salt
1 tsp. freshly ground black pepper
1 tsp. thyme
8 or 10 drops Tabasco
1 tsp. Accent
1 tbsp. paprika

Mix all of the ingredients well and marinate the chicken four hours, at least, and preferably overnight. Cook the chicken 15 or 20 minutes with the skin side down, and the rest of the time with the bone side down. Baste with the marinade.

MARINATED FLANK STEAKS OR CHICKEN

1/2 c. soy sauce
3 tbsp. honey
2 tbsp. vinegar
1 1/2 tsp. garlic powder
1/2 tsp. ginger
1/2 c. vegetable oil
3 tbsp. minced onion

Mix all the ingredients together. Pour over flank steaks or chicken. Let marinate 24 hours. Then BBQ or broil. It's best if you BBQ on grill!

Red Wine Chicken Marinade
2 cups dry red wine
1 bunch scallions, sliced
1 clove garlic, minced
1/2 cup olive oil
1/4 cup soy or teriyaki sauce
2 tablespoons dark brown sugar
1 teaspoon grated fresh ginger
1 tablespoon Worcestershire sauce

Mix together, Use as is for marinade or boil for 10 minutes and use as a basting sauce.

Italian dressing, is great for boneless breasts. A good BBQ rub is ok for frying or oven cooking. Seasoned salt works wonders.
