Until it starts to smell like fish?
Honestly, the rule in my home is 1 year or until we notice some freezer burn, which is the dehydration of all fluid, which ruins the taste (about the same flavor as a cardboard oatmeal box).
And if there is any discoloration in the blue or orange spectrum, it is tainted...
One clue to long storage is to evacuate all the air, or, vacuum seal it! Rotate the stock regularly, and, don't disturb Uncle Earl's body in the bottom, in the Hefty bags! We were going to cremate him, but, just haven't got to it... always saying, "he'll keep, kids!" There's the chores to do!

Ideally no more than 3 months. You won't get poisoned if you keep it frozen longer, but the quality of flavor will start to diminish.

Depending on the wrapping. 6 months is a good rule of thumb for fish or poultry.
