If you don't have yeast maybe you have baking soda and baking powder? If so, you can make a quick bread, which doesn't call for any yeast. It's called a quick bread because, unlike yeast bread, it doesn't have to rise before baking. Just understand that the texture won't be the same as a yeast bread (sort of like the difference between a cake donut and a yeast donut).
You can google "quick breads" for a multitude of recipes for different types of quick breads.

Use beer as a substitute.
Beer Bread
10 servings
3 cups flour, unsifted
3 3/4 teaspoons baking powder
2 1/4 teaspoons salt
1 tablespoon honey
12 ounces beer
Grease 9" x5"x3" loaf pan. Combine flour, beer, and honey in large bowl, stir together until well mixed. Spread batter in prepared pan. Bake at 350º F for 45 minutes or until browned and a wooden pick comes out clean. Turn out on rack. Cool before slicing.
Of course, the alcohol will bake out of the beer. Closest sub for yeast that I know of.

There is Irish Soda Bread that uses baking soda:
INGREDIENTS
* 1/2 cup white sugar
* 4 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 3/4 teaspoon salt
* 3 cups raisins
* 1 tablespoon caraway seeds
* 2 eggs, lightly beaten
* 1 1/4 cups buttermilk
* 1 cup sour cream
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch round cast iron skillet or a 9 inch round baking or cake pan.
2. In a mixing bowl, combine flour (reserving 1 tablespoon), sugar, baking powder, baking soda, salt, raisins and caraway seeds. In a small bowl, blend eggs, buttermilk and sour cream. Stir the liquid mixture into flour mixture just until flour is moistened. Knead dough in bowl about 10 to 12 strokes. Dough will be sticky. Place the dough in the prepared skillet or pan and pat down. Cut a 4x3/4 inch deep slit in the top of the bread. Dust with reserved flour
3. Bake in a preheated 350 degrees F (175 degrees C) oven for 65 to 75 minutes. Let cool and turn bread onto a wire rack.

most of the time, you need yeast.
the second thing you could do is use baking powder or baking soda. that will make it rise very little.
you seriously need some yeast, or better yet, just go buy a frozen loaf and start from there. if you are contiplating NOT using yeast, the frozen bread might be your best choice.

YEASTLESS WHOLE WHEAT BREAD
2 c. buttermilk
2 tbsp. melted butter
3 c. whole wheat flour
1 c. lightly packed brown sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
Don't preheat oven. Grease a 9x5 inch loaf pan. Whisk milk and butter in small bowl. Stir dry ingredients in large bowl. Make a well in center; pour in liquid and stir until smooth. Spread evenly in loaf pan. Bake at 350 degrees for 1 hour. (Place pan in center rack of oven.)
CHEESE BREAD
2 cups flour
4 tsp. baking powder
1 1/2 teaspoons salt
1 1/2 cups shredded Cheddar cheese
1/4 grated Parmesan cheese
2 eggs, beaten
1/4 cup butter, melted
1 cup milk
2 tablespoons grated Parmesan cheese
Preheat oven to 350F degrees.
Combine flour, baking powder, and salt. Stir in Cheddar cheese and 1/4 cup Parmesan. Mix together eggs, butter and milk. Add to the dry ingredients. Stir only until moistened. Batter will be somewhat lumpy. Do not over mix.
Pour into a greased 9x5" loaf pan. Smooth down the center with a wet spatula to flatten top. Sprinkle evenly with 2 tablespoons Parmesan cheese.
Bake about 45 minutes.
Serve warm, or sprinkled with cheese and toasted the next day.

Soda Bread(Yeast Free) bread machiene
155g rice milk
3/4 tsp organic apple cider vinegar or 1tsp lemon juice for yeast free
30g olive oil
1 egg (See note 1)
225g Dove's Farm Breadmaking flour (See note 2)
¾ Tbsp Fructose(Fruit sugar) or 1tsp agave syrup (both optional - makes more of a sweet "tea bread").
1 tsp salt
3 tsp GF Baking Powder
Note 1 - If avoiding eggs, then egg replacer can be used but mix up 1tsp egg replacer with 2 TBsp hand hot water, mix well, and add to milk and oil mixture, with vinegar, as in step 2 below.
Note 2 - If unavailable, use either 175g rice flour, 25g potato flour, 25g tapioca starch flour and add 1 tsp xanthan gum, or 175g rice flour, 50g tapioca starch flour and add 1 tsp xanthan gum. Mix well and add as in 3 below.
Method
Carefully weigh the milk and the oil into a mixing bowl.
Beat in vinegar/lemon juice, agave syrup if using, and the egg then pour into the bread machine pan.
Weigh flour and mix with salt and, if using, sugar, then place on the top of the liquid
Sprinkle the 3 tsp baking powder on the top of the flour.
Start bread machine on quickbread programme. It should start mixing immediately for around 6 mins. To aid mixing lift lid approx 3 minutes after mixing has begun and use a plastic spatula to scrape dough down the sides of the tin. DO NOT USE YOUR FINGERS. Set the timer for 50mins.

Irish Soda Bread

1 cup Rice Flour (I used white rice flour)
1/2 cup Tapioca Starch
1/2 cup Corn Starch
2 tsp Xanthan Gum
1 Tblspn sugar substitute(fructose) - (I used birch sugar) (optional)
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/4 cup oil of choice (extra light olive oil recommended)
1/2 cup Rice milk
1 egg
(optional, non-authentic additions: 1 tsp caraway seeds, slightly crushed, 1/4 cup currants or raisins, 2 tsp cinnamon)
Method:
Preheat oven to 375 degrees. Place a 10" ungreased cast iron skillet in oven to heat.
In a large bowl, combine all dry ingredients. Whisk until well mixed. Add wet ingredients and mix until well combined. Dough will be somewhat sticky. Turn onto floured (with rice flour) board.
With floured hands, knead dough a few times. Form into a disc shape.
Carefully remove hot skillet from oven and lightly spray with cooking oil. Place dough disk into skillet.
If you wish, carve an "X" into the top of the disc with a toothpick.
Brush top of dough with more Rice Milk.
Bake 35-40 minutes, until golden brown on top.
Serve warm!
I think that this could be cooked in a regular loaf pan, without the pre-heating business. I'm going to try that out next, so I'll let everyone know how it goes.

There are non-rising bread, or breads that use baking soda to get minor lift, like cornbread, dogbreads, panbreads, biscuits. None of these use yeast at all.
