I once made this for lunch for a bunch of people, one person came over to me and said he didn't even like tuna salad but mine was "THE BOMB".

Three to four cans of light tuna in water, drained
About 1/2 to 3/4 of a 15 oz. jar of good mayo
One medium onion finely chopped
1/2 to 3/4 stalk of celery finely chopped
1/2 to 3/4 of a medium sized green bell pepper finely chopped
(Celery and pepper amounts depend on size of vegetable)
One Granny Smith apple peeled and diced
Ground black pepper to taste

Mix all of the above well, if necessary add more mayo to taste and adjust texture, you want a nice firm texture to make sandwiches or to dollop on a cracker. If you are making sandwiches I recommend Romaine lettuce, leave out tomato it will make things too wet. Use a nice whole grain bread, rye is great. The contrast of tastes in this recipe is what makes it great, if you feel a little daring try adding just a little bit of curry to the mix for an interesting variation. ENJOY!

Start with a good quality fresh white tuna, (about 6 oz.), (fresh not canned).
Chop one medium onion.
Saute the tuna in olive oil until just done.
break up the tuna, and mix in the onion, two tablespoons of sweet pickle relish, and just enough Miricle Whip to moisten the tuna. Serve on a bed of lettuce and tomato, or as sandwiches.
