California Cuisine is a style of cuisine marked by an interest in "fusion"— integrating disparate cooking styles and ingredients— and is freshly prepared using local ingredients. The food is typically prepared with particularly strong attention to presentation.

Alice Waters, of the restaurant Chez Panisse in Berkeley, California, is usually credited with originating California cuisine and retains the reputation of offering the ultimate California cuisine experience. Her cuisine emphasizes the freshest ingredients which are in season and are procured solely from local farms. Wolfgang Puck, from the Spago restaurants, popularized California cuisine by catering high profile celebrity parties such as the Oscars after party. Puck became a celebrity in his own right, one of the first celebrity chefs.

As California is one of the major agricultural centers of the United States, dishes make plentiful use of fruits and vegetables. Some locally grown produce that are less common in other parts of the country include:

Avocados
Artichokes
Fresh figs
Fresh dates
Persimmons

In the northern coastal regions of the state, Dungeness crabs, salmon and oysters are in abundance during the season.

My interpretation of California Cuisine would basically personify freshness. Organic fruits, vegetables and hormone free meats. Lots of local fare from local growers. Interesting spices and combinations. Lower in fat etc., basically more health conscious.

moved to Tennessee from California about 3 years ago. I broke my hand and went to a local doctor. His first question to me was "What is a tofu eating California doing here?". I believe Californians have a reputation for eating healthy foods, not deep fried and sugary. So I would have to say healthy and lean, it is hard to get a good salad here (TN).

Usually it means there's avocado in it. Or seafood. Or fusion cooking. But generally it's avocado.
