Chicken Enchalatas
Shread your left over chicken
Add:
1/4 Cup chopped onion
1 small can chopped black olives
1 Cup grated cheddar cheese
1 small can chopped green chilis
Add To taste:
Garlic Salt
Black Pepper
Cumin
Chili Powder
Mix above all together in a bowl.
Mix 1 can cream of chicken soup with 1/2 cup salsa.
In a 9x13" pan create thin layers:
Corn Tortilla Shells torn and spread along the bottom of the pan
Spread some of the soup mixture
Sprinkle some of the chicken mixture
repeat layers ending in chicken mixture (I usually get 2 layers)
Bake at 350 for 20-30 min.
Serve with tossed green salad and corn.
This is my families absolute favorite!

Leftover chicken caesar salad
Ingredients
4 cloves garlic
150ml/5fl oz white wine
4 slices of streaky bacon, cut into lardons
2 thick slices of white bread, cubed
butter for frying
2 Cos lettuce
4 egg yolks
2 anchovy fillets
140g/5oz fresh parmesan, grated
½pt/290ml virgin olive oil
1 tbsp Dijon mustard
salt and freshly ground black pepper
1 roast chicken, cut into small pieces
Method
1. Peel the garlic and place in a pan with the wine. Bring to the boil and cook for about five minutes until the cloves are soft.
2. Take two pans. Crisp the bacon in one and cook the bread cubes in some butter until golden brown in the other one.
3. Remove the leaves from the lettuce and wash and dry well, then cut into chunky pieces.
4. Using a hand blender, add the wine and garlic together with the egg yolks, anchovy and cheese and blend, adding the oil slowly to stop the mix from splitting. Add the mustard and seasoning to taste.
5. Put everything into a bowl together with the leftover chicken and mix together. Season and serve.

VEGGIE-PACKED LEFTOVER CHICKEN CHOWDER
5 carrots
1 can corn
1/2 pound cooked chicken breast
1 large onion
1/2 head broccoli
3 medium sized potatoes
1 bell pepper (any color)
1 large tomato
1 stick of butter
cheese
1 packet of beef Stroganoff sauce mix
1 cube of chicken and tomato bouillon
leftover mashed potatoes (optional)
2 cups of milk
Chop all ingredients very small. Sauté onions and pepper in heated pot with olive oil. Add broccoli, carrots, potatoes, tomato and chicken. Stir in the sauce mix and bouillon, then pour in the milk, mixing ingredients well. Add the stick of butter. Add mashed potatoes and cook until potatoes and carrots are tender. Garnish with cheese and serve.
LEFTOVER CHICKEN POT PIE
Leftover chicken, diced
Leftover vegetables
1 can cream of chicken soup
Prepared gravy mix
1 can of biscuits
Mix all ingredients together. Pour into pan. Cover with biscuits. Cook until brown.
LEFTOVER GARDEN CHICKEN
Leftover chicken pieces
1 med. potato, sliced
2/3 c. sliced carrots
1/2 c. green beans
2 env. Lipton Cream of Mushroom Cup-A-Soup
1 c. water
In small skillet, combine vegetables and cup-a-soup and water. Simmer until warmed through. Actually could use any leftover vegetable or meat pieces. 2-4 servings.
LEFTOVER CHICKEN CASSEROLE
4 qt. casserole
4 lg. potatoes, peeled and sliced
3 med. onions, sliced
1 can peas, drained
1 can mushroom soup, diluted with milk
Leftover chicken
In casserole, place a layer of potatoes and layer of onion slices. Sprinkle some of the peas over the layer. Next, add pieces of chicken. Continue this until casserole is 3/4 full. Pour over the layers the mushroom soup. Place in a preheated oven (350 degrees) until the potatoes are tender. Serves 4 to 6.

If it's just plain roasted or fried chicken try to dice it and make a chicken salad for sandwiches. You could also boil some rice, dice the chicken. Put a little olive oil on the frying pan, fry some onions and sweet peppers. Add the chicken and rice and stir it together. Don't fry it for too long, only to warm up the chicken. Very easy and yummy.
Sorry, forgot my favourite: Use it for chicken bacon sandwiches. Slice the chicken, toast a few slices of bread. Spred a little mayonese on the bread, add chicken, bacon and lettuce. mmmmmm (make one for me while youre at it)

Chicken salad for sandwiches. Dice chicken, onion, celery, 1 apple, some walnuts. Mix with Miracle Whip salad dressing. Make a sandwich and add lettuce. Very simple.

you could make Simla Chicken. Chop up the chicken into bite-size pieces, and put in a heat-proof bowl. Whip up some double cream, and add ginger, worcester sauce and mustard powder to it. Spread the cream mixture over the chicken, and then grill it for about 10 minutes, till it's brown and bubbling.

chicken risotto. i had the same problem last week. i used - a load of left over roast chicken, cut up small, a jar of chicken and mushroom "chicken tonight", some broccoli, and some cooked rice. put it in the oven for 45 minutes and it was lovely. alternatively, check out www.yummyfood.net and look at the chicken and seafood jambalaya. i made that but omitted the seafood and it was yum!

Boil it and make soup
pick it apart and add sour cream and mushroom soup and make stroganoff over rice or pasta
pick it apart, add mayo, raisins, nuts, and grapes for chicken salad sanwich
chop it up and add some cream cheese, mushrooms, gr onions and butter and mix it up and put it in to a crescent roll dough and bake and make a chicken pocket. My husband LOVES these
