Its very easy...give this a try...

INGREDIENTS
1 cup heavy cream
1 teaspoon vanilla extract
1 tablespoon confectioners' sugar
DIRECTIONS
In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like.

LOW CARB WHIPPED CREAM DREAM

1 8 oz tub whipped cream
1 8 oz can crushed pineapple in juice, drained
1/3 cup lemon juice
1 cup chopped pecans (optional but really good)
1 cup chilled sugar free condensed milk (see recipe below)

Sugar Free Condensed Milk
1 cup cream
2 egg yolks
1/3 cup Splenda
1 teaspoon vanilla


Prepare condensed milk, below.
Mix all ingredients together and chill at least 3 hours in the refrigerator before serving.

CONDENSED MILK: Bring cream to a boil, but watch so it does not burn.

In a small bowl, beat egg yolks, add Splenda and vanilla.

Stir in some of the hot cream to temper the eggs. Slowly pour this egg mixture into the hot cream. Cook on medium low heat until thick, stirring constantly.

NOTE.....cook only until it coats the back of a spoon. Cooking longer makes it curdle and unusable.

Another method of cooking would be to use the double boiler. Allow to cool before using in cold recipes

Best sources I've found on the web for whipped cream are listed below. Personally, I add 1/8th tsp of cream of tartar for ea. pint of whipping cream to help keep the whipped cream from falling longer while stored. If you're going to eat it all in one sitting, this is not needed.

Whip a pint of heavy cream until it peaks, then add sugar to taste and a teaspoon of vanilla extract and gently mix until blended. Don't overwhip as the cream will turn into butter on you.

and just to open your eye's for it's possibilities go to the condiment aisle at the market and look for all the flavors in the extract-section -just like food coloring you can be your own kitchen-chemist !!
