In a large bowl place 1-2cans drained pineapple chunks.mandarine oranges,fruit cocktail (optional)maraschino cheeries,bag minatute marshmallows, shreddedcoconut,cool whip. Fold all ingredients togeather making sure you don't stir,just lightly fold,then refrigerate till nice an cold. (depending on how much you make depends on amt.of ings. you use it will make a lot if all containers are used] IT'S REALLY GOOD.

SOUTHERN FRUIT AMBROSIA

11 oz can mandarin oranges, drained
15 oz can pineapple tidbits, drained
8 oz can fruit cocktail, drained
1.5 cups mini marshmallows
1/2 cup coconut, shredded
1/2 cup walnuts, chopped
1 cup sour cream


Combine ingredients and let set overnight.
Serves ten.


AMBROSIA

1 large tub Cool Whip
20 cherries (approximately)
1 large can mixed fruit
(after.... any other fruit you would like, have fun with it and add your favorite nut!)

Refrigerate for about 3-4 hours and Enjoy

AMBROSIA SALAD

2 cans pineapple chunks, drained
2 cans mandarin oranges, drained
2 jars maraschino, drained
1 can coconut flakes
1/2 bag mini marshmallows
4 oz. sour cream
16 oz. Cool Whip

Combine sour cream and Cool Whip. Fold in all other ingredients. Chill covered for at least 2 hours.

Ambrosia Bowl
1 can (15 1/2 oz) pineapple chunks
2 tbl Cointreau, light rum, or orange juice
4 lrg Oranges, peeled and sliced crosswise
1/4 cup Powdered sugar, divided
4 med Bananas, diag. sliced
1 can (3 1/2 oz) flaked coconut
Maraschino cherries

Method :
Drain Pineapple, reserving syrup; set pineapple aside. Combine reserved pineapple syrup and Cointreau, mixing well; set aside. Layuer 1/2 oranges slices in a large bowl; sprinkle with 2 T powdered sugar. Layer half banana slices and 1/2 pineapple; sprinkle with half the coconut. Repeat layers of orange slices, sugar, banana and pineapple; pour syrup mixture over fruit.
Sprinkle with remaining coconut. Garnish with maraschino cherries. Chill 3-4 hrs.

Ambrosia Fruit Salad
(Makes 12 to 16 servings)

1 (3-ounce) package cream cheese, softened
1 cup Coco Lopez® Cream of Coconut
2 cups (1 pint) Borden or Meadow Gold® Whipping cream,
whipped
2 cups Campfire® Miniature Marshmallows
1 (15-¼-ounce) can crushed pineapple, well drained
1 (11-ounce) can mandarin orange segments, drained
1 (10-ounce) jar maraschino cherries, drained and cut in half
½ cup chopped pecans
In large mixer bowl, beat cheese until fluffy. Gradually add cream of coconut, beating until smooth. Fold in whipped cream. Fold in remaining ingredients. Pour into 8-inch square dish. Cover; refrigerate overnight. Cut into squares; garnish as desired. Refrigerate leftovers.

Individual servings: Spoon ½ cup mixture into 18 (2½-inch) foil baking cups. Proceed as above. (Make 18 servings)

2/3 cup shortening
1 3/4 cups sugar
2 1/2 cups sifted cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 cup flaked coconut
1 1/2 teaspoons vanilla extract
5 egg whites
--Orange Coconut Filling--
1/2 cup sugar
1 1/2 teaspoons cornstarch
1 tablespoon butter or margarine
1 egg yolk
1/3 cup flaked coconut
2 tablespoons grated orange rind
1 tablespoon orange juice
1 tablespoon lemon juice
--White Frosting--
1 cup sugar
1/2 cup light corn syrup
1/4 cup water
2 egg whites
1 teaspoon almond extract

Cream shortening; gradually add sugar, being well.
Combine flour, baking powder and salt; add to creamed mixture alternately
with milk, beginning and ending with flour mixture. Stir in coconut and
vanilla.
Beat egg whites (at room temperature) until soft peaks form; fold into batter.
Spoon batter into 2 greased and floured 9-inch round cakepans. Bake at 350
deg for 35 minutes or until a wooden pick inserted in center comes out clean.
Cool in pans 10 minutes; remove layers from pans and let cool completely.
Spread Orange Coconut Filling between layers; spread tops and sides of cake
with White Frosting. Yield: one 2-layer cake.
Orange Coconut Filling: Combine sugar, cornstarch, butter, egg yolk, and
coconut in a heavy saucepan. Cook over medium heat, stirring constantly,
until mixture thickens. Remove from heat and stir in orange rind and fruit
juices. Cool. Yield: about 1 1/2 cups.
White Frosting: Combine sugar, syrup and water in a medium-size heavy
saucepan. Cook over medium heat, stirring frequently, until mixture reaches
soft ball stage (240 deg).
Beat egg whites (at room temperature) until foamy. While beating at medium
speed of electric mixer, slowly pour hot syrup in a thin stream over egg
whites. Turn mixer to high speed and continue beating until stiff peaks form
and frosting is thick enough to spread. Add almond extract; beat until
blended. Yield: enough for one 2-layer cake.
