Ingredients for Mango Chutney
Serves 8
4 mangoes, peeled and cut to small pieces
1 Cup white vinegar
2 Cups sugar
2 cloves garlic, crushed
1 teaspoon chilli powder
1 tsp salt
Juice of 2 lemons
Method
Heat the vinegar in a large pan but do not boil. Add sugar and simmer for 10 minutes stirring until all dissolved. Puree the rest of the ingredients except the mango and then add everything into the pot and simmer on a low heat for 30 minutes. Leave to cool then store in sterilized jars.

Onion Chutney
6 cup Chopped sweet onions
1/2 cup Fresh lemon juice
2 tsp Whole cumin seed
1 tsp Whole mustard seed
1/2 tsp Tabasco sauce
1/4 tsp Red pepper flakes
2 tsp Ground chili pepper
1/4 cup Light brown sugar
1 x Salt to taste
Combine all ingredients in heavy saucepan over medium heat. Bring to boil, stirring frequently. When mixture comes to a boil, immediately remove from heat and pack into hot sterilized jars. Vacuum seal.
Makes 4 1/2 pint jars.
Tanzanian Green Tomato Chutney
12 ounces green tomatoes or tomatillos, cored and cut into 1/2 inch dice
2 large yellow onions, cut into 1/2 inch dice
2 large green (underripe) papayas (about 12oz each), peeled, seeded, and cut into 1/2 inch dice
3 cups sugar
2 cups apple cider vinegar
1 teaspoon coarse salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Habaneros (or your pepper of choice) sliced julienne, to taste
1. Place the green tomatoes, onions, and papayas in a large heavy pot. Add the sugar, vinegar, salt, and spices. Stir well.
2. Bring the mixture to a boil, reduce the heat slightly, and simmer uncovered until the mixture is thick, about 1 hour. Add peppers at the end.
3. Cool to room temperature, then refrigerate covered until ready to use. The chutney will thicken slightly as it chills. If you prefer a less liquidy chutney, drain a bit off.
Makes 4 cups

Chutney Baked Brie..this is a beautiful appetizer..looks like you slaved all day!
INGREDIENTS
1 (2.2 pound) wheel Brie cheese
2 teaspoons ground curry powder
1 (12 ounce) jar mango chutney
1 cup chopped cashews
1 French baguette, cut into 1/2 inch slices
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Sprinkle curry powder over top and sides of Brie; rub the curry powder into the rind to thoroughly coat the surface. Place the Brie wheel in a large pie plate or oven proof dish. Spread a generous layer of chutney over the top, and evenly sprinkle with cashews.
Bake 15 minutes in the preheated oven, or until cashews are slightly golden and cheese inside the rind is melted. Serve with slices of baguette.
