Latex allergies may also cross over into food groups. If you are already allergic to certain foods, you may be at high risk for developing a latex allergy. The following foods can trigger a latex-like allergic reaction because the proteins in them mimic latex proteins as they break down in the body:
Banana
Proteins very similar to the allergy-causing proteins present in latex (a plant sap) are present in other plants, and some of these are foods. For example, a latex-allergic person may have a reaction if they eat a banana; this is then known as a cross-reaction. It is caused when there is a very close structural similarity between the two similar proteins due to the sequence of their amino acid building blocks.

Although symptoms are normally fairly mild, in theory (and very occasionally in practice) these foods can cause anaphylaxis in a latex allergic person.

"Latex-fruit syndrome": frequency of cross-reacting IgE antibodies.
Brehler-R; Theissen-U; Mohr-C; Luger-T. Allergy. 1997 Apr; 52(4): 404-10
...Serum of 136 patients with immediate-type hypersensitivity against natural rubber latex had IgE antibodies to fruits in 69.1% of samples. IgE antibodies reacting with both latex and fruit allergens (papaya, avocado, banana, chestnut, passion fruit, fig, melon, mango, kiwi, pineapple, peach, and tomato) were found by RAST-inhibition tests. Of our patients, 42.5% reported allergic symptoms after consuming these fruits, in a total of 112 intolerance reactions. But fruit-specific IgE antibodies were found only in serum samples from 32.1% of the patients who noticed symptoms due to these fruits. Blood tests seem to be poor at predicting symptoms these foods in someone with latex allergy.
