Now that you have hollowed out that pumpkin, you have a huge bowl of seeds. They make a great snack if you bake them. Everyone will be digging into them as soon as you draw them from the oven.

Ingredients:
pumpkin seeds
1 dash salt
1 dash red pepper
1 dash freshly ground black pepper
2 tablespoon butter or cooking oil


Instructions:
Rinse the seeds in water and remove the fibrous material. Pat the seeds dry with a paper towel. Coat baking pan with butter or oil then pour in pumpkin seeds. Sprinkle on spices to taste. Bake in 250 degree oven for about 1 hour stirring at 15 minute intervals.

I always soak the seeds over night. and put a bit of garlic onion salt.
