Easy Homemade Biscuits
one third cup butter, softened and cut into cubes
2 and one quarter cups self-rising flour
1 cup buttermilk
3 Tbsp. melted butter
Cut softened butter into flour with a pastry blender or 2 forks just until butter cubes are coated with flour. Using your hands, gently combine until mixture resembles small peas. Stir in buttermilk with a fork just until blended. (mixture will be wet)
Turn dough out onto a generously floured surface, and pat to one-half inch thickness. Cut dough with a well floured 2-inch round cutter and place on lightly greased baking sheets.
Bake at 450 for 9-11 minutes or until lightly browned. Remove from oven and brush warm biscuits with melted butter. Serve.
Makes about 18 biscuits

The best tasting biscuits are made with buttermilk...and the easiest way to bake biscuits is by using the drop method.
ENJOY!!!
BUTTERMILK "DROP" BISCUITS
This classic recipe produces biscuits with a lovely light texture.
3 cups all purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
3/4 cup (1 1/2sticks) chilled unsalted butter, cut into 1/4-inch pieces

Sour Cream, Cheddar, and Green Onion Drop Biscuits
Roll out these biscuits, or drop into 12 muffin tins and bake the same amount of time. These are best the same day they're baked, but you can store them in an airtight container for up to two days. To warm them, wrap loosely in aluminum foil, and place in a 300° oven for five to 10 minutes.
2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
3 tablespoons chilled butter, cut into small pieces
3/4 cup (3 ounces) shredded reduced-fat sharp cheddar cheese
1/4 cup finely chopped green onions
1 cup fat-free buttermilk
1/2 cup fat-free sour cream
Cooking spray
Preheat oven to 450°.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, sugar, baking powder, salt, and baking soda in a large bowl, stirring with a whisk. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Add cheese and onions; toss well. Add buttermilk and sour cream; stir just until moist.
Drop dough by 1/4 cupfuls onto a baking sheet coated with cooking spray. Bake at 450° for 15 minutes or until edges are brown. Remove biscuits from pan; cool on wire racks.

The most basic recipe on earth for biscuits I've found is:
2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening (Crisco seems to work best for me)
3/4 - 1 cup milk
Heat ovem to 450 F. In large bowl, combine flour, baking powder and salt. Using pastry blender, fork or wisk, cut in shortening until mixture resembles coarse crumbs. Stirring with fork, add just enough milk until mixture leaves sides of bowl and forms a soft, moist dough.
On floured surface, toss dough lightly with hands until no longer sticky. Roll or press otu to 1/2" thickness; cut with floured 2" round cutter. Place biscuits on ungreased cookie sheet.
Bake at 450 F for 8 - 12 minutes or until light golden brown.
Of course, you could ALSO use the recipe on the back of a box of Bisquick - that's the MOST simple on the planet, just the mix and milk and you can drop them by spoon instead of kneading and rolling out! There are tons of additional recipes at the website below using this "miracle flour":

My hub was an army cook for 10 years--this is how he makes his heavenly biscuits.
Use self rising flour--then add enough milk to make it a texture like cornmeal. knead together, pat or roll out, cut, and bake.
His are perfect every time!
