Perfect for Sunday dinner....
Quick & Easy Chicken Pot Pie
2 cups of water
1 cup frozen mixed vegetables (or more if you like a lot of veggies)
4 teaspoons chicken bouillon granules
4 tablespoons plus 1 teaspoon cornstarch
2 cups milk
2 cups cooked turkey or chicken broken into bite size pieces (or more if you like a lot of meat in your pot pie)
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
2 refrigerated pie crusts
In a saucepan, bring water, vegetables, and bouillon to a boil. reduce heat; simmer, uncovered, for 3-5 minutes or until vegetables are tender. In a small bowl, combine cornstarch and milk until smooth; add to the vegetable mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add the turkey or chicken, cheese, parsley, salt and pepper. Pour into a greased 9" x 13" baking dish.
Unroll the pie crust and shape around the dish. Pierce a fork into the top to get some holes in it for air while it is baking. As you can see by my photo, the pie crust doesn't have to look perfect. Bake at 375 degrees for 25-30 minutes or until the top is golden brown.
"mmmmmmm" It's delicious and when baking it smells SO good!

I love Chicken Marsala, here's my version.
Grill 4 chicken breasts and julienne them.
Cook 8 oz fettuccini al dente.
Make the sauce.
MARSALA CREAM SAUCE
1 tb Unsalted butter
1 c Dry marsala wine
1 c Heavy cream
2 tb Unsalted butter -- cubed
Melt the butter add wine and reduce to about 1/2 of liquid remains. Add cream and simmer until reduced by 1/3.
Add sliced mushrooms and artichoke hearts to the sauce. Arrange pasta on large plate spoon sauce over the pasta and lay out the julienned chicken on top.
Have a nice glass of Merlot with this dish uit compliments it well.

Fun shaped Chicken dippers with home made Ketchup
24 lbs ripe tomatoes
3 cups onions, chopped
3/4 tsp ground cayenne pepper
3 cups cider vinegar (5%)
4 tsp whole cloves
3 sticks cinnamon, crushed
1-1/2 tsp whole allspice
3 tbsp celery seeds
1-1/2 cups sugar
1/4 cup salt
1. Wash tomatoes. Dip in boiling water for 30 to 60 seconds or until skins split. Dip in cold water. Slip off skins and remove cores. Quarter tomatoes into a 4-gallon stock pot or a large kettle.
2. Add onions and cayenne pepper. Bring to a boil and simmer uncovered for 20 minutes.
3. Combine spices in a spice bag and add to vinegar in a 2-quart saucepan. Bring to boil. Cover, turn off heat, and let stand for 20 minutes. Then remove spice bag and stir vinegar into tomato mixture. Boil for about 30 minutes.
4. Put boiled mixture through a food mill or sieve. Return to pot. Add sugar and salt, boil gently, and stir frequently until volume is reduced by one-half or until mixture rounds up on spoon without separation.
Adult: Cheat's mediterranean Mince
Cooking time: Approx 15 minutes.
Serves: 4
Ingredients:
450g (1lb) lean minced beef or lamb
500g jar of tomato pasta cooking sauce with vegetables
4 large pitta breads
50g (2oz) Cheddar cheese
Method:
In a large non-stick frying pan or saucepan, dry fry the lean minced beef or lamb until browned, approximately 4-6 minutes.
Add the jar shop bought tomato pasta cooking sauce with vegetables, bring to the boil and simmer for 6-8 minutes. Divide the mince between 4 large pitta breads and sprinkle with the grated Cheddar cheese.
Serve with Tomato and spring onion salad

Best Ever Chili
·1 tablespoons olive oil
·2 onions, chopped
·3 cloves garlic, minced
·1 pound ground beef
·1/2 lb smoked turkey sausage
·1 (14.5 ounce) can peeled and diced tomatoes with juice
·1 (12 fluid ounce) can or bottle Guinness stout (or other dark beer)
·1 cup strong brewed coffee
·2 (6 ounce) cans tomato paste
·1 (14 ounce) can beef broth
·1/4 cup packed brown sugar (or more to taste)
·2 1/2 tablespoons chili powder
·2 tablespoon cumin seeds
·1 tablespoon unsweetened cocoa powder (or 1/2 cube baking choc.)
·1 teaspoon dried oregano
·1 teaspoon ground cayenne pepper
·1 teaspoon ground coriander
·4 (15 ounce) cans kidney beans
·2 fresh hot chile peppers, seeded and chopped
Dash liquid smoke
DIRECTIONS
1.Heat oil in a large saucepan over medium heat. Cook onions, garlic, ground beef in oil for 10 minutes, or until the meat is well browned and the onions are tender.
2.Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt. Stir in 2 cans of the beans and hot chile peppers. Reduce heat to low, and simmer for 1 1/2 hours.
3.Stir in the 2 remaining cans of beans, and simmer for another 30 minutes.

Take crescent rolls in the refrigerator section and stuff them with different meats and cheese and bake them then dip them in marinara sauce and serve with salad.
