Spicy Roasted Pumpkin Seeds
Pumpkin seed
PER 1/2 CUP SEED
1 tsp Olive oil
1 tsp Emeril's creole seasoning (see recipe)
Here is Emeril's recipe for pumpkin seeds. You can simply substitute salt for the Creole Seasoning.
Preheat the oven to 350-degrees F. Rinse the seeds clean of any pumpkin flesh. Combine the seeds with 1 teaspoon olive oil and 1 teaspoon Emeril's Creole Seasoning (see recipe) per 1/2 cup of pumpkin seeds, using your hands to coat the seeds evenly. Place on a baking sheet and bake until brown and crisp, for about 15 minutes. Store in an airtight container at room temperature for 2 weeks.
Roasted Mexican Pumpkin Seeds
1 lb Raw Mexican pumpkin seeds
1 x Spray olive or corn oil
1/2 tsp Ground chili powder, not cayenne
1/2 tsp Crushed red pepper flakes
1/2 tsp Kosher salt
Preheat oven to 250. Mix chili powder, pepper flakes, and salt. Put the seeds in a bowl, and spray them with oil. Sprinkle the dried spices over them, tossing to distribute evenly. Spread on a baking sheet in one layer and bake until you hear them popping and they are browned slightly, between 5 and 10 minutes. Cool completely and store in an air-tight container.

Baked Pumpkin Seeds
Now that you have hollowed out that pumpkin, you have a huge bowl of seeds. They make a great snack if you bake them. Everyone will be digging into them as soon as you draw them from the oven.
Ingredients:
pumpkin seeds
1 dash salt
1 dash red pepper
1 dash freshly ground black pepper
2 tablespoon butter or cooking oil
Instructions:
Rinse the seeds in water and remove the fibrous material. Pat the seeds dry with a paper towel. Coat baking pan with butter or oil then pour in pumpkin seeds. Sprinkle on spices to taste. Bake in 250 degree oven for about 1 hour stirring at 15 minute intervals.

Spice them up!
Separate the seeds from pumpkin flesh and strings. Wash them well and spread them on paper towels to dry. Next spread seeds evenly over a cookie sheet. Heat them in a 375-degree oven for 20-30 minutes. raise the oven temperature to 400. Brown the seeds for five to 10 minutes until golden brown. Sprinkle with salt and serve hot or cold.

ugh! don't do them in the oven! pan fry them with a little oil and spices like suggested.
