use fresh chopped tomatoes cooked for a few mins with the lime garlic and wine (a cheap chenin blanc would work best). throw in some fresh cilantro. if you have it a bit of oregano and cumin and just a pinch of corriander, marjoram, thyme.

Omit the lime juice. Instead of white wine, use Vodka, for a vodka tomato sauce. Or, as mentioned, chicken cacciatore - saute the onions with the garlic, add herbs and mix in the tomato sauce.

Depending how you plan to cook it, sounds like a good base, chopped Tomatoes, Cilantro, Onions and a bit of Chili powder and Cumin, served with Tortillas and you have a meal.
Side note: A Chef cooking at 350? He knows the inside joke.

I am a chef by trade, Brown off the chicken in a frying pan first. take the chicken out add the garlic for 30 sec and then the wine. cook for a minute and add sauce seasoning and juice, finish in the pan or in the oven at 350

if it did not have the lime juice - i think it would sound better. you already have the white wine, you do not need the limes.
