I work in a Butchers shop - It's ok it's only the air that has turned it a Brown colour.

Sounds like it might have been freezer "burnt"
i.e. in there for too long....it should be pinky/red.
If it's brown it sounds like it's a bit dehydrated
.If it smells ok then just cook it though i would suggest cooking it a bit longer than you normally would for lamb which as you know is slightly underdone.
What cut of lamb was it btw?
p.s. like the sound of how you 'deforsted' your lamb...is that like slashing and burning?

if it's feels slimy to the touch dump it, could just be the brown areas are where blood has reacted with the air or been freezer burnt, either way cook it through completely, unfortunately not the best way to serve lamb, better pink but better safe than sorry.
Enjoy your meal

It should be pink but not brown. The brown areas probably have freezer burn. I doubt if this piece of meat would hurt you if you ate it but I also doubt if it would taste very good.

If it's' been in the freezer it can go a bit brown on the outside. It's OK to eat though. (After you've cooked it though. LOL)
