Fattoush
Zesty Lebonese salad.
Ingredients
2 Or 3 tomatoes, cubed
2 Small cucumbers, peeled, quartered lengthwise, and chopped
1 Medium green pepper, seeded, deribbed, and diced
5 Scallions, chopped
2 tbs. Finely chopped parsley
1 tbs. Finely chopped fresh mint or 1 tsp. dried mint
1 bunch Cilantro
2 Pita bread (or 2-3 slices of bread), toasted and cut into cubes
1/2 cup Olive oil
1/2 cup Lemon juice
Salt and black pepper.
Preparation
1. Toss veggies
2. Whisk oil, lemon juice and salt/pepper.
3. Pour dressing over veggies.
4. Top with toasted pita.

1/2 x A cos lettuce
10 x Cherry tomatoes
5 x Stoned olives
5 x Spring onions
1/4 x Cucumber
10 x Capers
1 tbl Chopped mint
1 tbl Chopped fresh parsley
DRESSING
1/2 x A lemon, juice of
2 tbl Extra virgin olive oil
1 tsp Herb or wholegrain mustard
CROUTONS
2 x Thin slices bread
1 x Garlic clove
2 tbl Olive oil
2 tsp Chopped fresh mint
Pre heat the oven to 350F. To prepare the salad, shred the lettuce, cut the tomatoes and olives in half, finely chop the spring onions and peel and dice the cucumber. Put all the salad ingredients in a large bowl and mix well together.
To prepare the dressing, mix all the ingredients together. To prepare the croutons, toast the bread slices. Crush the garlic and mix with the oil and mint. Brush the mixture over the slices of toast. Bake in the oven for 5 minutes. Cut off the the crusts and cut the toast into small squares.
Just before serving, mix the croutons with the salad and pour over the dressing.

This is what once was the poor people's salad. You need to chop any vegetables you have lying around the house "so they don't get old and thrown out" 'cause poor people don't waste food. Then you need to toast any old Arabic bread you have, "again so you don't waste it" and break it up into small pieces. Then you dress your salad with garlic that has been pureed in a mortar with a pestle, some olive oil, lemeon juice. Some sumac and a dash of salt are lightly rubbed into a slivered onion and thrown on top.
The salad is chopped coursely. The vegetables usually found in an Arab home which would usually be put into the salad are: lettuce, tomatoes, cucumbers, radishes, peppers, green onions, parsley, mint. If any of the vegetables aren't around it's okay you don't have to have them and if you have others you want to add you can also do so.
