Tamales Pie.....take a baking dish put a layer of tamales,then a layer of shredded cheese,a lawyer of chili,a layer of corn chips.Bake till warm.....good stuff.
Also spanish rice and refried beans go good with the tamales .

I would say that at this time of year a nice posole soup! A quick recipe would be: large can of white hominy, a good canned chicken broth (about 3 large cans then supplement with water), either boneless chicken breasts or boneless pork (maybe about 1 1/2 pounds, cubed), large can of tomatoes with basil, cilantro(fresh), salt, pepper, cumin (to taste, about 2 tablespoons), chili powder (1-2 tablespoons), 1 chopped onion, a can of spicy green chilies(small can)...just toss all together in the pot and bring to the boil, then turn to simmer for about an hour; if you want to thicken it up, make a slurry of masa and water and add to the soup! It's delicious!

taco salad is always a party favorite.. take a 1.5 pounds of hamburger and fry.. drain grease.. mix a package of El-paso with water as it says.. stir it in hamburger.. cut tomatoes, lettuce, onions, 1/2 red and 1/2 green pepper up in big bowl.. black olives and jalapeno peppers 2 if you like.. when hamburger is cooled, mix all together in bowl.. add these things just before it's time 2 eat.. a bag of Cheddar cheese or something you like in cheese.. a bottle of sweet n spicey french dressing.. you might not need the whole bottle.. add some and stir.. a bag of nacho chips.. crunch some up and mix in.. this can be served warm or cold.. it's really easy 2 make and you can't go wrong ; )

They make a great tex-mex casserole. Peel the skin off and put a layer of them in a casserole pan, cover with layers of beans, rice, and cheese and bake till the cheese starts to brown. Serve with fresh tossed salad and tortilla chips.
