If he plays paintball, it's best not to buy him a marker. Most players have a preference as to what kind of guns they like and buying him a gun that he would not prefer could stir up some trouble.
If he doesn't play at all or plays very little, offer to take him paintballing before getting him a gun. Believe me when I say that paintball players LOVE it when their significant others are also players. Go with him, play, and don't let the pain or any other frustrations turn you away from the sport, especially if you see that he enjoys it. I know that after people play and enjoy their first day of paintball, they sometimes go online and start looking at websites to find information or to buy stuff.
Traditionally he would pay for everything (I'm not sexist, that's just what usually happens) and probably insist on it, so don't feel guilty if it doesn't feel like you actually gave him a gift. But like I said, if you play it too and you LIKE it, he will feel way better to him than if you just got him a gun.
Later, if you see that he's into it, and he has some basic stuff, buy him a mask or something. Good masks are always welcome as gifts as they make playing a whole lot easier and more comfortable than when using the cheap masks that usually come with starter packs. And for that I recommend a Profiler. Almost everyone loves them.

Truely it depends on what type of paintball he wants to play. Most players are woodsball in that, they all just get together and go in the woods. I would start with something small and inexpensive to see if he likes it and will stay with it (opening for later gift idea) something like the Viewloader Triton II kit at Wal-Mart for $80 has everything needed to walk out in the woods for the day. If he wants something more down the road, a tippmann 98 or A5 is ideal for woods play.
Speedball...you can spend up to $2000 for a marker but if you want a decent marker that can play either way, a Smart Parts Ion should do the job...
Please please please stay away from Ebay markers (guns), they are typically there for a reason and do not allow for returns. Nothing worse than a broken marker at Christmas...email me if you need further assistance
