Hi!

The animal itself is called "prey"... or sometimes "quarry"... or the animal can be called "game" if the animal is being hunted for the sport of it...

The process of acquiring the animal that is "prey/quarry/game" is hunting... so "hunted" it is the correct word. Now what kind of hunting method is being used...

It is possible that the hunter is tracking/trailing its prey, stalking its prey, or persuing its prey:

1. track- follow a trail: to follow a trail made by somebody or something, or to try to find somebody or something by following a trail left behind.

2. trail- follow secretly: to follow a person or animal either by staying close but out of sight or by looking for signs of movement left behind, for example, footprints or scent

3. stalk- follow stealthily: to follow or try to get close to an animal unobtrusively.

4. pursue- chase: to follow or chase in order to catch, overtake, or attack.

You can also use more generic terms like "following" the prey, "searching for" the prey, "chasing/chasing down" the prey, or 'running after" the prey, etc...
