what was moses' surname (if he had one)? and why don't we (me) know about it?

The name Moses means [Drawn Out [that is, saved out of water]].

Moses was a “Man of the true God,” leader of the nation of Israel, mediator of the Law covenant, prophet, judge, commander, historian, and writer. (Ezr 3:2) Moses was born in 1593 B.C.E., in Egypt, being the son of Amram, the grandson of Kohath, and the great-grandson of Levi. His mother Jochebed was Kohath’s sister. Moses was three years younger than his brother Aaron. Miriam their sister was some years older.—Ex 6:16, 18, 20; 2:7.
God wanted us to know him by the name Moses and so that is what he is called.

I don't think he had a surname but would have been known as Moses....the son of ..... (in Arabic). I know when I go to my mother's village in Malta they still call me Yolanda tifla ta Gustina...which means Yolanda the daughter of Gustina and I dont even know who Gustina is lol.....

they didnt have surnames in those days
surnames were used when the lands became more populated to differenciate between one man and the next
and at first those name would be ... John son of David etc .. which eventually moved on to having a place name or employment after your first name

In ancient times the names of individuals were merely attached to their father's name or occupation, as in Yeshua the son of the carpenter. The Arabic version for the "son of" is 'bin', while the Nordic/European version is 'von'.
