Some really nice sausages, fresh mash potato's, greens or peas and gravy. Or - I made this the other night - Roast chicken breast (25 Min's in oven!) on roughly chopped red onion smothered in garlic butter, with sweet potato mash and dwarf beans and gravy. Yummy!

Steak Sandwich
1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound
1/2 t. coarsely ground black pepper
Salt to taste
2-3 T. oil
2 T. chopped onion
4 oz. crimini mushrooms, cleaned and chopped
1/2 t. thyme
1 loaf French or Italian bread, or 1 Vienna loaf
3-4 T. prepared mustard
Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.
Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them

This entree only takes 15 min to prepare and is a real treat. Recipe is for four but, you can cut it down.
4 Boneless skinless chicken breast halves (4 ounces each)
Garlic & Herb seasoning (to taste)
1 tablespoon Vegetable oil
1 cup sliced mushrooms
1 cup (4 ounces) shredded cheddar cheese (or your choice of cheese)
1/2 cup Chopped green onions
1/2 cup Bacon bits
Preparation
Flatten chicken to 1/4-in. thickness. Sprinkle with seasonings. In a large nonstick skillet over medium heat, brown chicken in oil for 4 minutes; turn. Remove chicken from pan. Saute the mushrooms and return chicken to pan top with cheese, green onions and bacon. Cover and cook until chicken juices run clear and cheese is melted, about 4 minutes.
4 servings.
If you don't like the mushrooms & cheese you could slice onions & pare some green apples instead. Saute the apples along with the onions. This one you top with Baby Swiss (Jarlesburg) cheese.
While you are doing that, put a baking potato in the microwave and bake.
Finish with your favorite steamed veggie.
Don't forget the wine a Pinot Grigio would work well but, I prefer Merlot.

Make some mashed potatoes and buy a piece of chicken breast,fry it nicely. Serve with some Salad and you've got yourself a nice ,home cooked,fairly cheap and tasty dinner !!

buy a fresh piece of fish or a flavored pork tenderloin, and cook it, then place it atop of a bed of rice, and serve with asparagus and cheese sauce, or steaed veggies. Get a bottle of chardonnay, and treat yourself to some ice cream for dessert!

make something you can have leftovers . chicken noodle soup
boil a chicken for a hour in the mean time make homemade noddles than cut up celery and carrots and cook in chicken water/broth
cook chick shred up and put in noodleyummy and cheap
