Ok, well my mom is a health nut and she loves Turkey.

So I made up my own recipe and now I will share it with you.

Its a Turkey Alfredo Sauce.

It makes it alot easier if you have that jarred alfredo sauce too.

So, you need one medium onion, a regular box of mushrooms, garlic, olive oil, and butter.

First you chop the onion and slice the mushrooms.

You put the oil and butter in a suatee pan and heat it till the butter is melted and bubling. You put in the turkey and the onion. Sautee it till the onion is translucent, and then add the garlic and mushrooms.

While all that is happening make sure you have your pasta picked out and water bioling. Cook the pasta regularly.

So, when the turkey seem to be pretty much cooked, you add the jar of alfredo sauce.

Cook the sauce till it starts to bubble.

Then you eat....YUM

You could half the recipe, and make the meatballs smaller.

Super-Size Turkey Meatballs w Spinach and Cheese
Serving Size : 4 From Every Day with Rachael Ray

Serve with buttered egg pasta and a green salad.

One 10-ounce box frozen chopped spinach, thawed
2 1/2 to 2 2/3 pounds ground turkey breast
1 medium onion, finely chopped
3 garlic cloves, chopped
1 large egg
1 3/4 cups milk
3/4 cup bread crumbs (3 handfuls)
1/2 cup freshly grated Parmigiano-Reggiano cheese
Coarse salt and freshly ground pepper
Extra-virgin olive oil, for drizzling
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup chicken broth
One 8-ounce package shredded provolone cheese or Italian cheese blend
1/2 teaspoon freshly grated nutmeg (eyeball it)
1/4 cup chopped flat-leaf parsley

Preheat the oven to 400°. Wring the spinach dry in a clean kitchen towel. Place the ground turkey in a large bowl and make a well in the middle of the turkey. Add the spinach, half of the onion, the garlic, the egg, 1/4 cup of the milk, the bread crumbs and the Parmigiano-Reggiano cheese and season with salt and pepper. Mix until combined, then form the turkey mixture into 12 large balls, arrange on a nonstick baking sheet and drizzle with EVOO. Roast for 25 minutes.

Meanwhile, heat a small saucepan over medium heat. Add a drizzle of EVOO and the butter to the pan. Melt the butter, add the remaining onion and cook for 2 minutes, then whisk in the flour. Cook for 1 minute, then whisk in the remaining 1 1/2 cups of milk and the broth. Bring the liquid to a boil, then stir in the provolone. Season the sauce to taste with salt, pepper and the nutmeg.

Place 3 turkey meatballs on each of 4 dinner plates and drizzle with the sauce; garnish with the parsley and serve.

i use ground turkey for everything that you'd usually use ground beef with. taco night is popular in our house. all you have to get is a seasoning packet, along with taco fixings, and everyone can personalize their tacos. we have also made cheeseburger pie 1 lb. hamburger 1 med. onion 1/2 tsp. salt 1 1/2 c. milk 3/4 c. Bisquick 3 eggs 1 can tomatoes, drained 1 c. shredded cheese Brown hamburger and onions together, put in a greased 9"x9" pan. Combine the milk, Bisquick and eggs together; pour over the hamburger. Bake at 400 degrees for 25 minutes. Add tomatoes and cheese and bake 10 minutes longer or until knife inserted in middle comes out clean or spaghetti or sloppy joes we'll do a lot, but you just had burgers, so that might be too close to the same.

Brown and drain the turkey, add chopped onion, green pepper, celery, and a can of diced tomatoes. Let this simmer for about 15 minutes. Add 1 cup of instant rice just sprinkled over the top and let simmer until rice is tender. Makes a great skillet dinner. I usually add garlic powder or salt and pepper to taste also. You can also add a can of mushrooms. Yummy!

Make tacos or turkey burger patties. I have made both and both are yummy. I just substitute the turkey meat for ground meat. When making the burgers, use an egg's white to bind the meat together. Enjoy!

Oh and I bet it would be good as a loose meat spaghetti!

Turkey Meatballs

1 small onion, grated
3 garlic cloves, minced
1 large egg
1/4 cup dried bread crumbs
3 tablespoons ketchup
1/4 cup chopped fresh Italian parsley leaves
1/4 cup grated Parmesan
1/4 cup grated Pecorino Romano
1 teaspoon salt
1/4 teaspoon ground black pepper
1 pound ground dark turkey meat
3 tablespoons olive oil
26 ounces Simple Tomato Sauce, recipe follows, or store-bought marinara sauce

Add the onion, garlic, egg, bread crumbs, ketchup, parsley, Parmesan, Pecorino, salt and pepper to a large bowl and blend. Mix in the turkey. Shape the turkey mixture into 1 1/4-inch-diameter meatballs. Place on a large plate or baking sheet.

Heat the oil in a heavy large frying pan over medium-high heat. Add the meatballs and saute until browned on all sides, about 5 minutes. Turn off heat. Transfer the meatballs to a plate. Pour off any excess oil. Add the marinara sauce, about 3 cups. Return all the meatballs to the pan. Turn the heat to medium-low and simmer until the sauce thickens slightly and the flavors blend, 15 to 20 minutes. Season the sauce, to taste, with salt and pepper.

Transfer the meatball mixture to a serving bowl. Serve with toothpicks.

Simple Tomato Sauce:
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.

Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.

turkey picadillo -- its like cuban hamburger helper --

use your turkey, a chopped onion -- kind of small, a chopped green pepper, a chopped red pepper, a chopped tomato, a couple cloves garlic, a teaspoon oregano, a teaspoon cumin, some chopped olives, some chopped capers, a small can tomato sauce. cook it all up and serve it with yellow rice.

i cook off the turkey fat and drain it and fry the veggies in olive oil separately and put the turkey back in -- less fat that way.

Make a turkey meatloaf using all the spices and other goodies like raw eggs, milk, chopped onions & celery, bread, and whatever. It will turn out great.
