Oven fries!
Cut 4 potatos into wedges and toss with 1 Tbsp olive oil and your favourite dried spices (I use seasoned salt, cajun seasoning, garlic powder, oregano, rosemary, etc). Line cookie sheet with aluminum foil (makes for easy clean-up) and cook in a 400 degrees oven for 20 minutes.
Alternatively, you could do this but only cook the oven fries for 15 minutes. Cool and freeze in batches. Then, when you're ready to have oven fries one night, pop them back in a 400 degree oven, frozen, for 20 minutes to reheat and crisp up. You could probably do a good half of the bag that way and have it in the freezer ready to use.

On top of all the other good answers, I put a cubed potato in split pea soup to thicken it while it's cooking. Or you could also make scalloped potatoes, potatoes au gratin, hashbrowns, those little "boats" stuffed with taco meat and cheese like you'd get at a Mexican restaurant as an appetizer.

Potatoes are so versatile. I really could eat them every meal and not get bored. You can make home fries with breakfast, leave them out of your lunches and then do shepards pie, or mashed potatoes with gravy, or baked potatoes with sour cream and chives and even cheddar and broccoli if you like that sort of thing. If worse comes to worse you can make clocks out of them :) Oh and check out some recipes for Needhams online they are wonderful chocolate and coconut desserts that have potato in them.

Keep them in the fridge or a cool place like you garage. They will last for months. I used to buy 50 pound bags of potatoes.

potato salads are beautiful!
or you can make pies with a potato topping!
alternatively if you have or know of any young children, you can cut out the potatoes to form shapes like stars and moon crescents and this really makes a fun art project! use it like a stencil!

lol make mashed potatoes 2 per person dice and mash with cheese and garlic sour cream serve with meat loaf chicken and a vege even serve with pork chops use them for thanksgiving
make baked potatoes with melted cheese poured on top
make fries with them or hash browns with breakfast
make seasoned potato wedges or pieces
