The number doesn't actually refer to the number of ketchup varieties (there are only three). It is in reference to the entire product line... but there are actually upwards of 57 products in the Heinz line. Apparently the founder, Henry J. Heinz, chose this particular number at random simply because he found it appealing... so appealing in fact that the corporate phone number for the Heinz head quarters in Pittsburgh is 237-5757, and the address is P.O. Box 57.
