I once ate a mint no bake cookies at a friends house and I loved it. As I have no contact with her now, does anyone know a recipe for no bake mint cookies. Also, what other easy christmas cookies can you give me?

Minted Refrigerator Squares

4 cups graham cracker crumbs
1 cup chopped walnuts
2 cups miniature marshmallows
1 cup powdered sugar
1 package (12 ounce) semisweet chocolate chips
1 cup evaporated milk
1/4 teaspoon peppermint extract

Mix together crumbs, nuts, marshmallows and sugar in large bowl. Set aside.
In a saucepan over low heat, heat chips and milk, stirring constantly just until chocolate is melted and mixture is smooth. Remove from heat and stir in extract. Reserve 1/2 cup of the chocolate mixture, then pour rest into cracker mixture and stir until all the crumbs are moistened.
Turn into buttered 9-inch square pan and press into an even layer. Frost with the reserved chocolate mixture. Chill until frosting is firm. Cut into squares.

Original recipe yield: 2 dozen pieces

INGREDIENTS
1 cup semisweet chocolate chips
1 teaspoon mint extract
1/2 cup pecan pieces
2/3 cup Cheerios
1/3 cup M&Ms mini baking bits (or raisins)

DIRECTIONS
Microwave chocolate chips in a bowl on high power until melted, about 2 minutes. Stir in mint. Thoroughly stir in remaining ingredients. Using a teaspoon, drop 1 1/2-inch pieces on wax paper. Cool.

You can go to a site called allrecipes.com and type in what you are looking for. It is a wonderful site with great recipes. I have made many mouths happy with this one!

Chocolate Peppermint Bars:
1 cup (2 sticks) butter, melted
4 (1 ounce) squares semisweet chocolate, melted
4 large eggs
2 cups granulated sugar
1 cup all purpose flour
2 1/2 confectioners' sager
15 tbs butter softened, divided
1 1/2 tbls whipping cream
1 teaspoon peppermint extract
12 ounces semisweet chocolate chips
-preheat oven 350F. grease & flour 15 x 11 inch jelly roll pan.
-combine melted dutter & melted choc. in large bowl beat with mixer on med high till blended.
-beat in eggs 1 at a time. add gran. suger, flour and mix well. spread in prepared pan. Bake 20 to 25 or until the layer pulls from the sides of pan. let stand to cool completely.
- beat con. suger, 7 tbls of softened butter, whipping cream and peppermint extract until smooth. Spead over cooled brownie layer.
-chill covered for 30 mins.
-combine choc. chips and remaining soft butter in small sauce pan. cook over med. heat till chips are melted. spread over chilled peppermint layer. let stand and cool. cut in to bars.
- To add X-Mas touch, add green or red food coloring to peppermint mix BEFORE spreading on brownie layer. Enough to make color brite not pastel color.
