I want to buy some pepper spray for my girlfriend, and also maybe a larger can for home defense purposes. Can you recommend a particular model/brand or the criteria by which one would judge competing products?

I don't think brands matter. Get the strongest you can. Also get her a keychain size so she will have it in her hand. If it's in her purse, she probably won't have time to reach it.
Home use is problematic. There is not enough ventilation to prevent the spray from effecting her as well. Since you should assume that the attacker is tougher, even the fact that he will get a higher dose might not be enough. Consider a TASER.

The higher the Capsacian ingrediant the more power full the spray then also look for spray distance

Most important is that you practice with her so she becomes comfortable with carrying it, getting it into her hand should a situation arise and using it (not actually discharging it unless necessary) effectively.

get the foam it stick to the face and eyes and has a better chance of not contaminating to much
