No, we are not products of incest. If you remember the story right, God plucked the rib from Adam to make Eve; so theoretically Eve is a part of Adam. You cannot have incest with yourself.
Now because Adam and Eve only had only boys, there is a lot of the story that was left out. Maybe God did the same thing with his sons. Otherwise that would mean that Eve would be the only woman to procreate.

My theory is that if Adam and Eve were perfect, or approaching perfection, then repeated layers of incest caused horrible mutilations. That would certainly explain a lot of things.

One would think so at first, but the Bible isn't clear. For instance, when Cain is banished for killing Abel, he is afraid that other people will kill him. Who are these other people? He goes far away, but to another city that is heavily populated. Obviously Adam and Eve didnt' live long enough to produce children who produced enough offspring to populate cities that were far off. At least they didnt' live long enough at the point when Cain killed Abel. Genesis says God created Adam and cuz he was lonely Eve. It doesn't say he stopped there.

You answer yourself in that question YES we can be products of incest since one cannot prove that in those days there was only A & E as humans, surely there was others. hence not all of us are products of incest.
