This is sooo easy~ nothing like a one pan meal!
To a roasting pan add 3 tbls olive oil, 2 cloves minced garlic, 1 chopped onion, 6 cubed potatoes (skins on is great), 1 diced green pepper, 2 diced tomatoes, 6 pieces chicken or Italian sausages (cut in 3rds).
Add salt & pepper to taste plus 1 tsp oregano, 1/2 tsp thyme, 1/4 tsp cumin, and a dash of celery seed (or use any spices you prefer- this isn't set in stone). Toss to coat meat and veggies.
Cover pan and roast in 350f oven until potatoes are soft and meat juices run clear- just over an hour. Be sure to toss them once during cooking time.
This is so simple and you can change the dish by changing the meats, veggies, and/or spice mix to suit your taste.

Sausage and Potato Casserole

4-6 slices bacon, cut into 1-inch (3 cm) pieces
2 onions, chopped
2-4 cloves garlic, finely chopped
8-12 pork sausages such as Italian sausages
4-6 baking potatoes, peeled if desired and thinly sliced
1/2 tsp (2 ml) dried sage
Salt and freshly ground pepper to taste
1 1/2 cup (375 ml) chicken stock or water

Fry the bacon in a large skillet over moderate heat until crisp.
Transfer to paper towels to drain and saute the onion and garlic
in the same skillet until tender but not brown, about 5 minutes.
Transfer to a plate and set aside. Fry the sausages in the same
skillet until browned on both sides - there is no need to cook
them completely at this stage. Layer the potatoes in a greased
baking dish, top with the bacon and onion mixture, season with
sage, salt, and pepper, and top with the sausages. Add the stock
and bake tightly covered in a preheated 350F (180C) oven until
the potatoes are tender and the sausages are cooked through,
about 1 hour. Serves 4 to 6.

Well it depends on where you live, but if it's cold double up on a 5 can soup recipe, my kids really go for it. It's like a can of stewed tomatoes, cream of corn soup, Progresso Ministrone, Veg All and kidney beans. You can double the recipe if kids are bigger and believe it or not - it's actually really good. Another we like to do is mixing mild salsa, rice, black beans, chopped green peppers and using the mixture for burritos - sprinkle cheddar on the mixture and microwave in the burrito until the cheese melts. you can add any meat you like. But, it's sounds simple and questionable - but actually very good. Those are the simplest I know that my kids and hubby really like.

My favourite recipe is just stir-fried veges in a wok served with rice. You can use any veges you have in the fridge, and flavour them with soy sauce or chilli sauce if you like.

can't go wrong with good old spaghetti w/meat sauce, or mini meat balls. I use a lean ground beef, for meat sauce. add bread crumbs or crushed saltine crackers and an egg, some salt/pepper, little garlic powder, and after browning return to sauce....if you really want to stretch it, add sauce to pasta, mix, sprinkle w/Parmesan cheese, some garlic bread if you like....most kids love spaghetti, good belly warmer!
