Before the arrival of the A345 and 744, most flights from NY to Asia had to make a stop in Anchorge, Vancouver or LAX. This days airlines like Continental,JAL,Korean Air offer nonstop flights from New York, cutting the flight time considerably.

All take the "great circle route" to their destination. That does not mean polar necessarily, but most go above the arctic circle.
New York to Tokyo, for instance goes well north of Anchorage Alaska.
I believe that the airlines want to be a certain distance from a landing strip if there is an emergency, do North Pole flights may not be appropriate.
San Fran to Europe goes well above Greenland. Even CHicago to Stockholm is over greenland.

All do, since airplanes are only certified for certain stretches over open water, if for example an engine breaks down. Planes do not like open water since there are no airports there, in case something happens. No one goes over the north pole though, since you cannot land there either.
My suggestion, just look for the most convenient connection and overall flight time.
