Salmon-in-a-Snap
Serving Size 4 Total Time:20 min
4 1-inch thick salmon fillets (about 1 pound)
1/2 teaspoon lemon-pepper seasoning or freshly ground black pepper
1 - 2 teaspoons soy sauce
1 medium orange, halved and very thinly sliced
2 cups small broccoli florets
1 cup reduced-sodium chicken broth
3/4 cup water
1 teaspoon minced garlic
1 cup instant couscous
Lightly coat a shallow baking pan with cooking spray; set aside.
Preheat oven to 450 degrees F.
Season salmon fillets with lemon-pepper seasoning. Arrange fillets in prepared pan. Drizzle with the soy sauce. Top with orange slices. Bake, covered, for 8 to 12 minutes or until fish just flakes easily when tested with a fork.
Meanwhile, in a 2-quart saucepan bring broccoli, chicken broth, water, and garlic just to boiling. Cook, covered, about 3 minutes or until broccoli is barely crisp-tender. Stir in couscous. Remove from heat; cover and let stand 5 minutes. Serve fish over hot cooked couscous and broccoli. Makes 4 main-dish servings.

If you want a simple, savory and easy recipe for salmon or any meaty fish, all you have to do is to smear the fish with a mixture of olive oil, salt, little lemon, and parsley, grill it on an iron skillet for about two or three minutes on each side, and serve with boiled potatos salted on butter, and a green salad. One is salmon patties, you use one egg per can, 2 slices of bread or crackers. Fry in a skillet of hot cooking oil, until golden brown. Next, is baked whiting fillets with lemon pepper, garlic powder and butter. Bake in the oven 350 degrees for 30 minutes to an hour!

I like to open 2 cans of salmon add 2 eggs cut up a onion and chop it add flour to help hold the patties together and put in the frying pan with a little oil and cook to a golden brown.

Fish en Papillote

This is a particularly great recipe for kids for two reasons: they love to help put it together, and it can be modified to leave out any ingredients they don’t care for -- or to add others they like.
2 potatoes (about 1 pound), peeled and thinly sliced
Salt and freshly ground black pepper
4 6-ounce pieces of red snapper or other fish
1 tomato, cut into ¼-inch dice
1 zucchini, cut into ¼-inch dice
1 yellow squash, cut into ¼-inch dice
1 red bell pepper, cut into ¼-inch dice
4 fresh basil leaves (or 1 teaspoon dried)
4 bay leaves
½ cup dry white vermouth or wine
Preheat the oven to 400 degrees F. Arrange four large (12 by 20 inches) rectangles of heavy-duty foil on a work surface, shiny side down. In the center of each, spread out a quarter of the sliced potatoes. Season with salt and pepper. Place a piece of fish on top and season with salt and pepper. Arrange a quarter of the diced tomatoes, zucchini, squash, pepper, basil and a bay leaf on top. Sprinkle with a little more salt and pepper.
For each serving, bring together the short edges of the foil rectangle high over the fish. Pour 2 tablespoons of wine over each piece of fish. Crimp the top edges of the foil to form and airtight seal.
Place the papillotes on baking sheets and bake until the foil is puffed and the fish inside is cooked, about 20 minutes.
Serve the papillotes on plates. Help each guest open the packet and slide the fish, vegetables and juices onto the plate. Take care not to burn yourself on the escaping seam.

I have a good recipe with salmon, olive oil,garlic,red Bell peeper,diced tomato,salt,black peeper,turmeric,and paprika,a bit of water,make a good sous,and add the fish,at the end of the cooking add some cilantro

smoked salmon and cream cheese-- a great classic.
i don't do it in a bagel though, i prefer french bread or a ciabatta. also works best with a creamy french goats cheese, and a bit of dijon mustard. mmm...
oh yeah, a little tip, to get rid of the oiliness of the salmon, you may want to put lemon juice on it. and another little tip, check out the food network website, foodnetwork.com. they have thousands of great recipes for everything.

Salmon is good with brown sugar, olive oil, garlic cloves and lemon spread all over it. Then you cook it for a while (not sure how long)

My favorite is a good fresh cut cat fish fillet . I make it simple I batter it in egg then cornmeal add salt and pepper and fry it in olive oil. Fast , simple & easy i'm not sure about the healthy part thou good luck.
