given that the muffins or bakery items are cooked, the microbes and any yeast cells should be killed. the presence of preservatives should inhibit the growth of microbes on the bakery items after exposure to the air after cooking. even so, baked goods will provide a great surface for mold growth, especially if they are damp or exposed to the air

mold for sure, and probably some bacteria that are quite fastidious, but exact bacteria, I'm not sure.
