when we talk about eggs, we usually mean hen's eggs. there are however, also eggs of ducks, geese, quails and turtles.
a hen's egg has 3 parts, namely, its shell, egg white and egg yolk.
-egg shell
the shell is hard and porous and is mainly of calcium carbonate. it helps to protect the contents of egg. the colour of egg ranges from white to brown, depending on the breed of the hen. the colour, however, does not make any difference to the quality of the egg.
on the inner side of the shell are 2 thin white membranes lining it together. they separate at large end of the egg to enclose an air space.
a fresh egg has a small air space. as it grow older, air passes into it and the air space gets bigger. unfortunately, bacteria also pass into the egg with air; so it is liable to go bad on storage.
-egg white
the egg white makes up about 58% of the weight of the egg. there are 2 layers of egg white, the layer of thin white surrounding the layer of thick white enclosing the yolk. the egg white is a colourless, sticky liquid which is made up mainly of water and 1/3 protein. protein in egg white gives the egg white its foaming property.
-egg yolk
the yolk of an egg forms the remaining % of the weight, it is suspended in the white, held in position by string-like membrances called the chalazae. the colour of the egg yolk varies from light yellow to deep orange. the colour depends on the feed of the hen but the nutritive value is the same. the egg yolk is a rich source of proteins. it also contains lecithin an emulsifier, and cholesterol.

Unless they have been fertilized they are not chicken embryos. The farmers or ranchers have a special light that can shine through the shell so they can see if it has been fertilized. Sometimes the miss one and that is when you will crack an egg open and it will have red in the yolk, and you should really not use those.
