Anyone who is not a baker at heart have any ideas on making coconut macaroons...try it a few years ago and they were terrible...flat, not fluffy..thank you all

Coconut Macaroons
Yield: 12 Servings

Ingredients

2 c coconut
4 egg whites room temp. WHIPPED<<<<<<<
1/4 c flour
1 c white sugar
1 ts vanilla

Instructions

Combine all ingredients and drop by tsps. onto greased cookie sheet
Bake at 350 F. 12 to 15 min.

I have made these many many times and use this web site often. She has never let me down and they are always delicious. I hope that this helps.
Coconut Macaroons
Makes 90
2 large egg whites
Pinch of salt
One 14-ounce can sweetened condensed milk
2 teaspoons pure vanilla extract
Two 14-ounce bags shredded sweetened coconut
Ice cream, optional for Icearoons
1. Heat oven to 300°. In a medium bowl, whisk egg whites and salt until frothy, about 2 minutes. Stir in condensed milk and vanilla. Using a rubber spatula, fold in coconut until well combined.
2. Line 2 baking sheets with parchment paper or nonstick baking mats. Using a teaspoon and your fingers, form macaroons into 1 1/4-inch mounds about 1 inch apart.
3. Bake until macaroons are golden brown, about 20 minutes. Transfer baking sheets to a cooling rack; let cool completely. Store in an airtight container for up to a week.
4. You can make also make Icearoon ice cream sandwiches by spooning ice cream onto the bottom of one macaroon and topping with another macaroon.

This is the one I always loved - fluffy and chewy...

"Coconut Macaroons" - 4 dozen

5 1/2 cups flaked coconut
1 (14 oz.) can sweetened condensed milk
2 tsp. vanilla extract
1 1/2 tsp. almond extract
1 egg white; whipped

Preheat oven to 325*. Line baking sheets with foil; grease and flour foil. Set aside.
In large bowl, combine coconut, condensed milk, extracts and egg white; mix well. Drop by rounded teaspoonfuls onto prepared baking sheets.
Bake 15-17 minutes or until lightly browned around edges. Immediately remove from baking sheets (macaroons will stick if allowed to cool); cool on wire racks. Store leftovers loosely covered at room temperature.
(Note: Macaroon Kisses - Prepare and bake as above. Press solid milk chocolate piece into center of each macaroon immediately after baking.)

I don't know, but I read some years ago that for unknown reasons coconut macaroons seemed to help calm down the irritable bowels of people with Crohn's Disease. I mentioned it to a friend who had Crohn's; she tried coconut macaroons and said that they did help her.

I once made them with
Eggs, flour, a little vanilla or sugar and shredded coconut.
Make sure they will hold together but too much flour will make them fall apart after baking.
Then just drop tablespoons on a cookie sheet
Bake at 350 ish until the top starts to brown.
That was like ....ten yrs ago. lol....they did turn out ok though.
Trial and error.

Just go and buy them and forget about making them. I tried it too. Waste of time.
