Spanish Rice
If you want Pinto's in it, have it your way, or just have them on the side and let your guests do the mixing
Makes 4 servings
Ingredients:
2 tablespoons butter
2 tablespoons yellow onions, chopped
1 cup rice, white, long grain
1/2 cup tomato juice
1 cup water
2 chicken bouillon cubes
3 dashes bottled hot pepper sauce
2 teaspoons chili powder
1 pinch black pepper
1 Roma tomato, chopped
2 tablespoons red bell peppers, chopped
2 tablespoons green bell peppers, chopped
Preparation:
In a saucepan that has a tight fitting cover, melt the butter and sauté the onions until soft. Add the rice and stir to coat the rice with butter, then add the tomato juice, water, bouillon cubes, pepper sauce, chili powder, and black pepper.
Stir to dissolve the bouillon cubes and bring to a boil. Once the liquid reaches a boil, reduce heat to its lowest setting, cover, and go away for 25 minutes.
Do not stir, do not look under the lid, do not worry !!
Once your timer goes off, remove the pan from the heat, lift the lid off quickly and throw in the tomatoes, and chopped peppers and put the lid back on quickly.
Do not stir, do not taste, do not worry !! Allow the rice to steam in the pan for 20 more minutes.
Now... If you didn't cheat and if you didn't worry, your Spanish rice should be perfect. Stir in the tomatoes and peppers and serve with a smile. If you did cheat...Well, Shame on you !!!

1 Cup of white rice, long grain
2 Roma tomatoes
1/4 of medium size onion
1 garlic clove
2 cubes of chicken buillion
2 cups of chicken broth ( can use hot water instead )
canola oil
In a pan with lid pour oil (about 3 spoonsfulls) when lightly hot add rice, in a blender mix the tomatoes, onion, garlic with a little water, when rice is golden add tomatoes mix and chicken broth, and chicken buillion, let it boil and then lower heat to simering, about 25 min. when all liquid is gone your rice is done!!
For your beans if you are cooking them from scratch make sure yuo let them soak at least 6 hours prior to cooking, once soak pour them in a pot of boiling water, cover them and let them cook until soft, make sure they have enough liquid, before you turn them off add salt to taste and your done. If you like you can fry them with a little bit of cooking oil, in a pan heat the oil and add beans, let them boil and then smash them (if you dont have a smasher can use a cup, just be careful) add a dash of milk and your done!!
You can make salsa to go with your rice and beans, in
2 cups of water, boil
2 roma tomatoes and
5 serrano peppers, blend them with
1 garlic clove and a little piece of
Onion, a little bit of
Cilantro and a dash of
Salt, to taste and
BUEN PROVECHO!!
PD: you can compliment your beans and rice with warm corn tortillas, they're deliciosos!!

19ozcanned chickpeas, (2 cups)
drained and rinsed
1/2tspcayenne pepper
1medyellow onion. diced, (2 cups)
10medgarlic cloves, crushed
1cupuncooked long grain white rice
1 1/2tspsaffron strands
2cupvegetable broth
1cupdry sherry
1xripe medium tomato, diced (1 cup)
14ozcanned sliced red pimientos, (1 cup)
drained and diced
1cupfrozen petite peas
20xpitted black olives, cut in half
1loafCuban bread
Salt and freshly ground black pepper, to taste
Method :
* Preheat oven to 350 degrees F. Heat olive oil in a large nonstick frying pan. Add chickpeas and cayenne and saute on high 1 minute. Remove to a plate, lower heat to medium-high, add onion and garlic, and saute 5 minutes. Add rice to frying pan. Saute a few seconds. Sprinkle saffron over rice and add broth. Bring to a simmer and add sherry, tomato, and pimientos. Return chickpeas to frying pan. Cover and simmer 15 minutes.
* Add peas and olives and cook 1 minute. Add salt and pepper to taste.
* Place bread in oven to warm through, 5 to 7 minutes.
Spanish Rice and Quinoa with Black Beans

Ingredients :
1/2cupwhite rice
1/2cupquinoa rinsed well
1 3/4cupwater
1xgreen pepper chopped
1medonion chopped
1xclove garlic minced
8oztomato sauce
1 1/2tspchili powder
1tspcumin ground
1tsporegano
1dshblack pepper
1 1/2cupblack beans, cooked drained
fatfree cheese or sour cream optional
Method :
* Note: quinoa uses the same proportions of grain to water and cooking time as white rice does, so they can be cooked together easily. Be sure to rinse the quinoa before cooking to remove the bitter coating the grains have. Use a fine strainer, or line a strainer with a coffee filter.
* Put rice, quinoa and water into a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes. Saute onion, green pepper, and garlic briefly, using liquid of choice (or cook on High in microwave for about 2 minutes). Add to rice with rest of ingredients, and put into a 2 qt casserole dish. Bake at 350F for about 20 minutes.
* Could top with low/fatfree cheese or sour cream.
* NOTES : I made up this recipe last night. I already had the rice and quinoa
cooked from earlier in the week, so the rest of it went together pretty
fast. You could adjust the spices to taste. This wasn't all that spicy
as it was.
Spanish Chicken and Rice Casserole

6xBoneless skinless chicken breasts, cut into strips
1can(28 oz) of Bush's Baked Beans
1can(14 1/2 oz) stewed tomatoes
1 1/2cupWater
1/2cupUncooked rice
1tspChili powder
1/2tspGarlic salt
1tblVegetable oil
Method :
* Combine chili powder and garlic salt, sprinkle over chicken. In skillet, brown chicken in hot oil. Combine chicken and remaining ingredients in lightly greased 3-quart baking dish. Cover and bake at 400F for 45 minutes or until rice is cooked.
* Makes 6 servings.

go to the store go to the rice isle and find the pre made 90 second spantish rice. Microwave for 90 seconds and serve.
